Green Beans with Almonds - A Simple Thanksgiving Side Dish

My Go-To Thanksgiving Side Dish: Green Beans with Almonds

As a busy working mom, I'm always looking for recipes that are both delicious and easy to make. This green bean recipe perfectly fits the bill. It's a dish I've been making for years, a family favorite that's become a staple at our Thanksgiving and Christmas gatherings. What's even more rewarding is that my 10-year-old niece, Lily, eagerly anticipates this dish whenever she knows I'm coming over. Her excitement alone makes this recipe worth the effort.

The beauty of this dish lies in its simplicity. It's not fussy, it doesn't require a lot of specialized ingredients, and it's surprisingly quick to prepare. Even if you're not a seasoned cook, you'll find this recipe incredibly easy to follow. And the end result? A vibrant, flavorful side dish that complements any main course. The combination of tender green beans, crunchy almonds, and a hint of garlic is a delightful dance of textures and tastes. The subtle sweetness of the pearled onions adds another layer of deliciousness to this already delightful plate.

Beyond the Holidays: While this is a holiday favorite, it's versatile enough to enjoy year-round. I often make a smaller batch for a weeknight dinner, paired with grilled chicken or fish. It’s so adaptable that I can use it for potlucks and casual get-togethers because the recipe is quite forgiving.

Tips and Variations:

  • Fresh vs. Frozen: I prefer fresh green beans, but frozen ones work just as well. Just make sure to thaw them completely before cooking.
  • Garlic Lovers Unite: Feel free to adjust the amount of garlic to your liking. If you're a serious garlic fan, add more!
  • Spice It Up: A pinch of red pepper flakes can add a nice kick to the dish.
  • Herb Infusion: Experiment with fresh herbs like thyme or rosemary for an extra layer of flavor.
  • Nut Alternatives: If you're not a fan of almonds, feel free to substitute with other nuts, such as pecans or walnuts.

More Than Just a Side Dish: This recipe has become more than just a dish; it's a memory maker. The happy faces of my family and friends enjoying this side dish are a testament to its simplicity and deliciousness. It's a reminder of the importance of shared meals and the joy of creating something special in the kitchen. So, whether you're planning a grand holiday feast or a simple weeknight dinner, give this green bean recipe a try. You won't be disappointed.

This recipe holds a special place in my heart, not just for its delightful taste but also for the cherished memories it creates. It embodies the essence of effortless elegance – a simple dish that delivers an extraordinary dining experience.

This recipe is a testament to the fact that simple ingredients, combined with a touch of love and care, can create something truly special. It's more than just a side dish; it's a culinary hug, a symbol of warmth and togetherness. It's a dish that evokes feelings of gratitude and joy, reminding me of the simple pleasures in life.

Step-by-step

    • Cook or steam your green beans until bright green (don't overcook!!)
    • Add green beans to a large tupperware container
    • Add in butter/margarine and garlic
    • Cover and shake until well coated (you can stir too, but I find shaking does a better job)
    • Sprinkle evenly with garlic powder, salt and sour cream
    • Cover and shake again until the sour cream has lightly coated the green beans and is "melted" in
    • Gently toss in pearled onions and toasted almond slivers
    • Sprinkle salt and pepper to taste
    • ENJOY!
    • Pearled onions cooking instructions: Immerse the bag of onions in boiling water until tender (5-10 minutes). Remove from water and squeeze to remove the shells.
