  • Usa una ricotta di capra compatta e ben scolata. Se è troppo liquida mettila per qualche ora in un colino a perdere il liquido in eccesso, così che sia più facile poi preparare l’impasto per gli gnocchi.
  • Trita finemente le erbe aromatiche. Scegli la quantità di foglie da usare in base al tuo gusto, facendo attenzione ad equilibrare bene i profumi: io ho usato una ventina di foglie di ciascuna erba.
  • Mescola la ricotta con la farina e aggiungi il trito di erbe aromatiche, poi regola di sale e pepe. Lascia l’impasto in frigo per almeno un’ora coperto con una pellicola per alimenti.
  • Prepara gli gnocchi usando un cucchiaino per formare le quantità: forma tante palline grandi poco più di una nocciola arrotondando l’impasto con le mani infarinate.
  • Man mano che sono pronti sistema gli gnocchi su un tagliere ben infarinato.
  • Mentre scaldi l’acqua per cuocere gli gnocchi prepara il condimento.
  • Taglia i fiori di zucca a listarelle sottili e trita le erbe aromatiche: anche in questo caso scegli la quantità di basilico, menta e melissa che preferisci, io ho usato una decina di foglie di ogni erba.
  • Versa qualche cucchiaio di olio in una padella, aggiungi i due spicchi di aglio in camicia, i fiori di zucca tagliati a listarelle e le erbe aromatiche. Lasciali cuocere a fuoco medio per meno di un minuto, regola di sale e pepe e poi togli la padella dal fuoco.
  • Cuoci gli gnocchi in acqua bollente salata finché non vengono a galla, scolali e buttali in padella. Saltali con il condimento di fiori di zucca per un minuto o due. Se qualche gnocco di colora e diventa dorato, ottimo. Saranno ancora più buoni.
