My husband is not a fan of cooked Kale, but apparently raw kale is a hit! And super easy! I totally cheated with premade dressing, but the fresh lemon and Parmesan take it up a notch. Kale doesn't wilt like lettuce, so this is good to make ahead for parties! You can also add a protein and serve with bread to make this a balanced dinner.
