Step-by-step

  • Place bowl of an ice cream maker in a freezer the night before. It is and important step!
  • Also the night before, in a blender or food processor, add coconut milk, maple syrup and vanilla extract. If using vanilla beans, lay them on a cutting board, cut in the middle lengthwise and scrape out the seeds with a paring knife. Add to the blender and process until well combined.
  • Place mixture in a fridge to chill overnight. This is important step otherwise your ice cream won’t crystallize, especially if it is hot outside.
  • The next day, pour ice cream mixture into frozen ice cream bowl, place lid on top and turn it on to start churning. Depending on your ice cream machine it may take 20-60 minutes to bring ice cream to a soft serve consistency. It won’t fully freeze.
  • Transfer soft serve ice cream into any container with a lid and freeze for another hour or so. To serve, let thaw for 5-10 minutes.

The Base and Sweetener Balance

Swapping maple syrup for raw honey alters the freezing point because liquid sugars retain different water activity levels. Full-fat canned coconut milk supplies the necessary fat solids to mimic traditional dairy without churning into icy blocks. Blend the coconut milk, sweetener, and vanilla thoroughly before chilling. Chill the liquid base in the refrigerator overnight to drop its temperature below 40 degrees Fahrenheit. Warm base mixtures will not crystallize correctly inside the machine.

Freeze the ice cream maker bowl for a full 24 hours prior to use. Pour the thoroughly chilled liquid into the running machine and churn for twenty to sixty minutes until it reaches a soft-serve consistency. Transfer the churned mixture into an airtight container and place it in the freezer for one hour to firm up further. Scaling the batch requires ensuring your specific machine bowl is not filled past two-thirds capacity to allow for proper expansion.

Second-Day Transformations

Frozen plant-based desserts often freeze solid due to lower protein content compared to dairy. Allow the container to rest at room temperature for five to ten minutes before scooping. Leftover ice cream develops large ice crystals over time if stored improperly. Press a piece of parchment paper directly against the surface of the remaining ice cream before sealing the lid to prevent freezer burn during storage.
