Assessing fermentation activity requires ignoring arbitrary clock times and watching the physical behavior of the batter instead. When the starter is truly ready for incorporation into dough, its volume should visibly expand by roughly fifty percent, accompanied by numerous small bubbles piercing the surface and a sharp, mildly acidic aroma.
