Step-by-step

  • Line slow cooker with liner or cooking spray.
  • Rub each chicken breast with Greek Rub to coat generously on each side.
  • Next, rub about ½ Tablespoon of garlic on each chicken breast.
  • Place chicken breast in slow cooker and drizzle lemon juice over the top.
  • Crumble and stir 2 chicken bouillon cubes in 1½ cups of hot water. Once dissolved and stirred as best as possible. Pour over chicken. Cover with slow cooker lid.
  • Cook on LOW for 6 hours, or until cooked through and tender.

The Moisture Mechanism

Boneless chicken breasts lack intramuscular fat, making them prone to drying out during long thermal applications. Dissolving two bouillon cubes into one and a half cups of hot water creates an isotonic braising liquid that prevents moisture loss through osmosis. Cooking on low for six hours breaks down collagen gently without seizing muscle fibers.

Adapting for Dietary Needs

This formulation is naturally gluten-free and dairy-free, but sodium content requires attention if hypertension is a concern. Commercial bouillon cubes contribute significant salt; substituting a low-sodium vegetable broth reduces sodium levels without altering the final protein yield. Ensure any pre-mixed Greek spice blend is certified free of anti-caking agents containing wheat derivatives.

Ingredient Adjustments

Fresh lemon juice provides citric acid that brightens the flavor profile, whereas bottled alternatives contain sodium benzoate preservatives that impart a metallic aftertaste. Minced garlic from a jar works in a pinch, but fresh cloves yield sharper allicin compounds when rubbed directly into the meat.
