Enchilada Casserole

This yummy casserole is something the whole family will enjoy! It's a big hit at potluck dinners as well! It is so easy and you can add just about anything you want to the burger mix! The more you add the more it feeds! For some reason every time you re-bake it, it gets hotter! I'm not sure why! The day you make it it's mild. Second bake is medium and 3rd bake is fire hot! I just serve this with a dollop of sour cream on top and a side salad!

My Go-To Enchilada Casserole: A Family Favorite

As a busy mom, finding time to cook delicious and satisfying meals for my family is always a priority. This Enchilada Casserole has become a staple in our home, and for good reason! It's incredibly easy to make, customizable to everyone's tastes, and always a crowd-pleaser. The best part? It's so versatile; I can whip it up on a weeknight or prepare it ahead for a weekend gathering. The flavors meld beautifully, creating a comforting and savory dish that everyone in the family devours.

What I love most about this recipe is its adaptability. Some nights, I keep it simple with just the basic ingredients. Other times, I get creative, adding in different vegetables like onions, celery, or even bell peppers for extra flavor and nutrients. My kids especially love it when I sneak in some finely chopped olives—a little salty surprise hidden within the layers! The beauty of this casserole is that you can truly make it your own, tailoring it to the preferences of your family and what you have on hand. It's a great way to use up leftover vegetables or experiment with different canned soups or sauces. I've even been known to add a sprinkle of cumin or chili powder for a little extra kick.

The layering process is so satisfying. The soft, slightly pliable tortillas soak up the rich and flavorful sauce, creating a texture that's both comforting and delicious. The cheese melts beautifully in the oven, forming a golden-brown crust that's irresistible. The casserole also reheats beautifully, and yes, it does seem to get spicier with each reheating! I think this is because the flavors have more time to blend and deepen with the heat. It's a delightful surprise each time, a comforting reminder of a simple dish that brings so much joy to our family. Whether served with a fresh side salad or some crusty bread, this Enchilada Casserole never fails to impress.

I usually make a double batch when I have company coming over, and it's always a hit at potlucks. People always ask for the recipe, and I'm always happy to share! It’s truly a recipe that's easy to master, yet impressive enough to serve to guests. It's a testament to the power of simple ingredients and a little bit of creativity in the kitchen. And that, my friends, is what makes cooking so rewarding.

So, if you're looking for a delicious, easy, and family-friendly recipe, give this Enchilada Casserole a try. You won't be disappointed!
