Pepe's Hideaway Guacamole

We enjoyed this guacamole during our Mexican vacation to Pepe's Hideaway. I was overjoyed when they included the recipe in their emailed newsletter! Enjoy it with tortilla chips, over tacos, burgers, or salads, or even mix it into your favorite Mac and cheese recipe for something a little different but very delicious.

Step-by-step

  • Remove peel and pit from all avocados.
  • Use either a large bowl and fork or a food processor (do not over-puree) to mash three of the avocados with all of the sour cream until creamy.
  • Fold in Serrano, onion, and cilantro.
  • Dice remaining avocado into 1/4" cubes.
  • Fold avocado, tomatoes, and lime juice in to mixture.
  • Add salt to taste.
  • Serve immediately or refrigerate for 30 minutes.

Achieving Texture Without Special Gear

Why is restaurant guacamole smooth yet structurally sound? The secret lies in a split-batch technique. Mashing three avocados completely smooth with the dairy creates a velvety emulsion that coats the palate. Folding the final avocado in as quarter-inch dice restores physical resistance to the bite. Standard kitchen forks work adequately for smaller batches, but a pastry blender speeds up the process significantly without generating unwanted heat. Avoid immersion blenders entirely. They introduce too much air and shear the cell walls, turning the fruit into a loose, baby-food consistency.

Acid Balance and Fresh Produce Behavior

Citrus juice does more than brighten flavor; ascorbic acid halts the enzymatic browning reaction by lowering the pH level. Bottled lime juice contains added sulfites and concentrated citric acid that taste harsh and metallic compared to fresh fruit. Squeeze fresh limes at room temperature to maximize juice yield before adding the liquid. Roma tomatoes require thorough seed extraction to prevent watery pooling at the base of the serving bowl. Salting must happen at the very end because sodium draws moisture out of raw vegetables through osmosis, altering the thickness over a thirty-minute resting window.
