Mochaccino Microwave Cake

I've made this twice. Both times I couldn't believe it worked. If you are making this as a last minute - oh no we have company coming dessert - make sure you do it as soon as you can. It does need to cool before you start playing with it otherwise it you might deflate it. In the end - this must be one of the best recipes I have ever come across!

Step-by-step

  • Sift the flour, cocoa powder, baking powder & a pinch of salt in a large bowl. Whisk the remaining ingredients in a seperate bowl, then stir the liquid ingredients into the dry ingredients until smooth. Pour into a greased 22 cm (9") microwave-safe cake tube.
  • Place the cake in the microwave on top of an inverted microwave-safe pie dish & cook on high for 7 mins. Remove from oven & leave to stand.
  • Topping - Heat the castor sugar & 90ml water in a microwave safe jug on high for 5 mins. Stir in the liqueur or coffee. Drizzle half the syrup over the cake in the tube while it is still slightly warm, then set aside to cool completely.
  • Melt the chocolate in the microwave, stirring every 30 seconds until smooth.
  • Turn the cake out onto a serving plate. Drizzle with the rest of the syrup & then the chocolate. Top w/ brazil nuts & serve.

Microwave baking demands precise moisture control because electromagnetic energy agitates water molecules rapidly, which can toughen gluten networks if liquids are not balanced with adequate fat and sugar. Utilizing freshly brewed coffee rather than instant granules introduces volatile aromatic compounds that drastically improve the depth of the crumb while providing the exact hydration needed to dissolve the castor sugar fully. When scaling or modifying this formula for dietary needs, replacing standard dairy butter with coconut oil maintains the necessary fat percentage of 32g per serving without altering the structural emulsion of the batter. Toasting the brazil nuts before application breaks down bitter surface compounds and releases essential oils that adhere better to melted chocolate drizzles.

Optimizing Microwave Heat Distribution

Elevating the cake pan on an inverted pie dish forces convection currents beneath the center tube, preventing the dense sugar syrup from pooling at the bottom during the seven-minute high-power cycle. Sifting the cake flour with cocoa powder and baking powder eliminates lumps that otherwise survive rapid microwave cooking, ensuring an even rise throughout the 22 cm ring. Allowing the cake to rest inside the tube for ten minutes post-cooking lets residual steam redistribute evenly before the initial sugar syrup application.

  • If the cake center appears wet after seven minutes, let it stand inside the closed microwave for three additional minutes of carryover cooking.
  • Stir melted chocolate in thirty-second intervals to prevent scorching the milk solids.
  • Cool the cake completely before unmolding to avoid structural collapse.
