Step-by-step

  • Heat oven to 300F.
  • Sprinkle bottom of a 9" springform pan with graham cracker crumbs.
  • Beat cream cheese until smooth, add ricotta cheese, sugar, eggs, and vanilla and beat until blended.
  • Add pumpkin, cornstarch, cinnamon and nutmeg, beating until smooth.
  • Pour batter into pan (over crumbs) and bake 1 1/2 hours at 300.
  • Turn oven off, and leave cheesecake in oven for 30 more minutes.
  • Remove and cool completely.
  • Refrigerate 6 hours, or overnight.
  • Top with whipped cream if desired.
