Step-by-step

  • Preheat your oven to 300°F
  • Line a baking tray with a Silpat or baking parchment.
  • Add all of the spices and sugar to a small bowl and stir to combine.
  • Put your aquafaba into a bowl and whisk until white and foamy. You don't need it to be stiff like meringue. I used my electric hand whisk and it took less than 1 minute.
  • Pour the nuts into the whisked aquafaba and stir gently to coat.
  • Pour in the spice & sugar mix and stir gently again to coat the nuts in the mix.
  • Pour everything out and onto your prepared baking tray.
  • Bake for 15 minutes then take them out, stir them about a bit and put them back for another 15 minutes.
  • Remove from the oven and push the nuts apart a bit with a fork so they don't dry hard in a big clump.
  • Sprinkle with a little sugar just to give some more texture (this step is optional)
  • Leave to cool and harden on the tray.
  • Once cool break them up a bit with your hands and store in jars or other air tight containers.

My Unexpectedly Addictive Vegan Candied Nuts

Let me tell you a story about a simple recipe that completely blew me away. I'm not a professional chef, just a busy mom juggling work, kids, and the never-ending quest for a healthy yet delicious snack. I stumbled upon this recipe for vegan candied nuts while browsing online, and initially, I was skeptical. Vegan candied nuts? Could they possibly be as good as the traditional kind? I decided to give it a try, mostly out of desperation for a healthier alternative to the usual sugary treats my kids devoured. What happened next surprised me completely.

The process itself was surprisingly easy. I followed the instructions meticulously, measuring out the spices – cinnamon, smoked paprika, a touch of salt – and mixing them with the sugars. The aquafaba (chickpea brine), which I initially eyed with suspicion, whipped up beautifully into a light, foamy consistency. The nuts, once coated in this magical mixture, transformed into something truly extraordinary in the oven. The baking time was perfect; I appreciated the small breaks which gave the nuts a chance to spread evenly and to avoid the big clumps.

The result? Crunchy, sweet, and satisfyingly spicy candied nuts. The perfect balance of textures and flavors. My kids loved them (a huge win!), but I was equally captivated. These nuts weren't just a healthy alternative; they were a delicious upgrade. They became a staple in our snack rotation, disappearing faster than I could make them.

What makes this recipe truly special is its adaptability. Feel free to experiment with different spices. I've tried adding cardamom, ginger, and even a pinch of cayenne pepper for a fiery kick. The possibilities are endless! And the best part? They’re surprisingly easy to make in bulk. Perfect for holiday gifting, sharing with friends, or simply keeping a big jar on hand for those moments when you need a little sweet and crunchy goodness.
