Step-by-step

  • Marinate calamari rings or any seafood you like in white wine, 1 clove of garlic, a little parsley, salt and pepper and put in the fridge.
  • Using a casserole baking dish, put in a good glug of olive oil at the base, celery, half a handful of parsley and fresh oregano, a handful of chopped tomatoes, 1 chopped garlic clove and half the chopped onion.
  • Then a layer of potatoes overlapping slightly but not completely, a handful of arborio rice spreading over the potatoes and half the calamari rings (or seafood).
  • Repeat the next layer minus olive oil and celery.
  • You can do 3 layers depending if you have enough potatoes and seafood left.
  • Finish off with a final layer of potatoes, salt & pepper and olive oil.
  • Using the calamari marinade, pour over the top and fill half the dish with water.
  • Bake for 30 minutes covered then 5-10 minutes uncovered to crisp the top layer of potatoes.
