Step-by-step

  • I used my crock pot but it can be cooked on the stove as well.
  • First, I put all my non-fresh vegetables in the crock pot and turned it on high.
  • Next, I cut the baby carrots in half and put them in a large pot on the stove in enough water to cover them. Boil until soft.
  • While the carrots are boiling, cut up the rest of the vegetables and set aside.
  • When the carrots are finished, add them to the crock pot.
  • Then, boil the rest of the vegetables in the carrot water.
  • When soft, add them to the crock pot as well as some or all of the water (depending on how much of it your crock pot will hold).
  • I let it cook in the crock pot for about two hours so all the flavors run together.
  • Also, I added Worcestershire sauce, lots of pepper, some salt and other seasonings to taste.

My Go-To Cleansing Veggie Soup: A Busy Mom's Recipe

Life as a working mom is a whirlwind. Between school pick-ups, soccer practice, and endless grocery shopping lists, finding time for myself, let alone cooking healthy meals, often feels impossible. But I've learned that prioritizing nourishing food doesn't have to be complicated. This Cleansing Veggie Soup is my secret weapon – a simple, healthy, and delicious recipe that fits seamlessly into even the busiest weeknights.

I stumbled upon this recipe years ago, when I was desperately seeking quick, healthy meal ideas that wouldn't leave me feeling sluggish. The beauty of this soup is its versatility. You can easily adapt it to whatever vegetables you have on hand, making it incredibly budget-friendly and convenient. I often use leftover vegetables from other meals, reducing food waste and maximizing flavor. I’ve become a bit of a soup-making ninja, whipping up big batches on the weekend and storing them in the freezer for quick weekday meals. This way, even on the most chaotic evenings, a healthy and satisfying dinner is only minutes away.

The recipe itself is refreshingly straightforward. It starts with a base of hearty vegetables like carrots and celery, providing sweetness and a satisfying crunch. Green peppers add a delightful burst of freshness, while stewed tomatoes lend their rich, tangy flavor. I’ve also found that adding a generous helping of green onions dramatically improves the soup’s overall taste. The chicken noodle soup mix adds a subtle savory depth, and Worcestershire sauce brings a lovely umami richness to the broth that ties all the flavors together beautifully. A generous pinch of salt and pepper enhances the savory notes of the vegetables and the broth.

The best part? This soup is incredibly adaptable. Feel free to experiment with different vegetables. Add in zucchini, spinach, or even some diced potatoes for extra heartiness. You could also swap out the chicken noodle soup mix for a vegetable broth base, making it a completely vegetarian-friendly meal. Some nights I’ll add a dollop of plain yogurt or a sprinkle of fresh herbs just before serving to add a bit of creaminess and freshness. It’s truly a blank canvas for culinary creativity.

Beyond the practical aspects, this soup holds a special place in my heart. It's become a symbol of self-care in the midst of a hectic life. The act of preparing this simple meal, even amidst the chaos, is a grounding ritual. The aroma of simmering vegetables fills my kitchen with warmth and comfort, creating a moment of tranquility amidst the storm. And knowing I'm nourishing my body with healthy ingredients gives me a sense of accomplishment, a small victory in a day filled with many.

This recipe isn't just about the food; it's about making time for myself and my family. It’s a testament to the fact that healthy eating doesn't have to be time-consuming or complicated. It's about finding joy in simple things, like the warmth of a comforting bowl of soup on a chilly evening. It's a reminder to slow down, breathe, and savor the simple pleasures life has to offer. So, go ahead, give this recipe a try – you might just find your own little piece of happiness in a bowl.

Tips and Variations:

  • Make it a slow cooker meal: Throw everything in your slow cooker and let it simmer on low for 6-8 hours or on high for 3-4 hours. This is perfect for busy weekdays.
  • Adjust the spice level: Add more or less pepper to control the spiciness. A dash of cayenne pepper could also add a nice kick.
  • Add protein: For a heartier soup, add cooked chicken, lentils, or chickpeas.
  • Make it creamy: Blend a portion of the soup for a creamier texture.
  • Freeze for later: This soup freezes beautifully. Store it in airtight containers for up to three months.

This Cleansing Veggie Soup is more than just a recipe; it's a reflection of my journey as a busy mom, navigating the challenges and rewards of balancing work, family, and self-care. It’s a testament to the power of simple, healthy meals and the joy they can bring. I hope it brings you the same comfort and satisfaction it brings to my family and me.
