Step-by-step

  • Place rack on middle rack in oven. Preheat oven to 350.
  • Make a foil liner for a 9x13 pan by turning the baking pan upside down. Tear a piece of foil the length of the pan, leaving extra (about 2 inches) hanging down on both ends. Form the foil over the outside of the pan, Then flip the pan over, and place the molded foil to the inside of the pan. Spray the foil with cooking spray.
  • Whisk cocoa and boiling water together in a large bowl until smooth. Add unsweetened chocolate and whisk until chocolate is melted. Whisk in melted butter and oil. Mixture may look curdled at this point. Add eggs, egg yolks and vanilla. Continue to whisk until smooth. Whisk in sugar until fully incorporated. Using rubber spatula, fold in flour, salt and bittersweet chocolate all at once, taking care to not over mix.
  • Scrape batter into prepared pan and bake until toothpick inserted in center comes out with a few moist crumbs attached, about 30-40 minutes. Do not over cook.
  • Transfer pan to wire rack and let cool completely, about 1 to 1 1/2 hours.
  • Remove from pan using foil liner to lift brownies out of pan.
  • Cut when cooled.

My CI Chewy Brownies Adventure: A Baker's Tale

As a busy working mom, finding time for anything beyond work and family can feel like a Herculean task. But there’s one thing that consistently manages to bring me joy, a sense of calm amidst the chaos – baking. And when it comes to baking, there's nothing quite like the rich, decadent satisfaction of a perfectly chewy brownie. My latest obsession? CI Chewy Brownies.

The recipe itself is deceptively simple, a testament to the power of quality ingredients and a few well-executed techniques. The initial steps, preparing the foil liner for the baking pan, might seem slightly fussy, but trust me, it's worth the effort. It makes removing the brownies from the pan a breeze – a clean release, every single time. This is especially important when you’re aiming for those perfectly intact, picture-perfect squares.

The process of combining the wet and dry ingredients is almost meditative. The rhythmic whisking of cocoa and boiling water, the slow melting of the chocolate, the gentle folding of the flour – each step contributes to the overall texture and flavor profile. I’ve found that paying close attention to this stage is crucial. Don't overmix the batter; you want that signature chewy texture, not a dense, cakey consistency.

The baking time is a delicate dance. It’s a game of patience, waiting for that perfect moment when a toothpick inserted into the center emerges with just a few moist crumbs attached. Overbaking is the enemy here; it transforms a chewy masterpiece into a dry, disappointing square. I usually err on the side of caution, setting the timer a few minutes early and checking frequently.

The aroma that fills the kitchen during baking is pure magic, a heady blend of chocolate, vanilla, and warmth. It's a sensory experience that transcends the simple act of baking, transporting me to a place of comfort and contentment. And that feeling only intensifies when the brownies are finally ready, cooling slowly on the wire rack.

Finally, the moment of truth: the first bite. The initial crunch, followed by that satisfyingly chewy interior, the intense chocolate flavor, the slight hint of bitterness balanced by the sweetness – it's simply perfection. I often share these brownies with my family, colleagues, and friends, spreading a little bit of joy with every bite. It's a delicious way to connect with others, a small act of kindness baked into every square. These brownies have become more than just a treat; they're a symbol of my ability to find joy and create something beautiful, even amidst the everyday hustle and bustle.

The beauty of this recipe is its adaptability. I’ve experimented with adding various mix-ins – chopped nuts, dried cranberries, even a swirl of peanut butter – each time resulting in a unique and delightful twist. But the basic recipe itself is a triumph, a perfect balance of rich chocolate and satisfying chew. So, if you're looking for a brownie recipe that’s both delicious and relatively easy to make, look no further. Trust me, your taste buds (and possibly your family and friends) will thank you.

Beyond the simple act of making these brownies, I’ve discovered that baking itself has become a valuable form of self-care. It's a moment of quiet contemplation amidst the chaos, a chance to focus on something tangible and rewarding. And while the brownies themselves are undeniably delicious, the process of making them is perhaps even more fulfilling. The meticulous measuring, the precise mixing, the watchful baking – it all contributes to a sense of accomplishment that extends far beyond the sweet treat itself.

So, give these CI Chewy Brownies a try. I’m confident they will become a favorite in your home, a delightful treat to share, and a rewarding experience to savor. It’s more than just a recipe; it's a journey into the heart of baking, a reminder of the simple pleasures that life can offer.
