  • Mix in a bowl all the dry ingredients for the dough. Gradually add the water and knead well. Gradually add the oil and knead well. Add the butter cubes and knead until you get a smooth and uniform dough. Cover with a wet towel and set aside for 15 minutes.

  • Arrange cookies in a buttered pan and bake at 180C / 350F until the cookies turn golden brown.

My Grandma's Secret: Maarud (Date-Filled Rolls) - A Taste of Tradition

The aroma of warm spices and sweet dates fills my kitchen, a comforting scent that instantly transports me back to my childhood. I’m making Maarud, a family heirloom recipe passed down through generations. These date-filled rolls aren't just a treat; they're a connection to my heritage, a taste of home, a symbol of family gatherings past and present. The recipe itself is simple, yet the result is nothing short of magical. The delicate, flaky pastry encasing the rich, sweet date filling is a symphony of textures and flavors that captivates the senses. It’s a recipe that’s easy enough for a beginner baker but satisfying enough for the most experienced.

My grandmother, a woman of quiet strength and boundless love, taught me this recipe. She would spend hours in the kitchen, her hands moving with practiced ease, her brow furrowed in concentration as she kneaded the dough, a ritual passed down from her own mother. The process was as important as the outcome, a time for sharing stories, laughter, and the unspoken bond of family. Now, as I make these rolls, I feel her presence, her love infused in every fold and twist of the dough. Each cookie is a tiny piece of her heart, a tangible link to a past that feels both distant and intimately close.

The beauty of this recipe lies not only in its deliciousness but also in its adaptability. Over the years, I’ve experimented with different variations, adjusting the spices, adding a touch of orange zest, or even substituting different types of nuts for added texture. But the core remains the same – the perfect balance of sweet and spicy, the comforting warmth of the baked pastry, and the nostalgic feeling of connection to family and tradition. I've even tried it with different types of dates, Medjool dates give a richer, more intense flavor, while Deglet Noor dates have a slightly milder sweetness. The choice is really just a matter of personal preference.

More than just a recipe, Maarud is a story. It’s a story of family, tradition, and the enduring power of simple pleasures. It's a story I share with my own children, hoping to pass on not just the recipe, but the spirit of love and connection that lies at its heart. The rhythmic kneading, the sweet aroma, the golden-brown cookies – these are the elements of a legacy, a legacy I am proud to uphold and share. So, gather your ingredients, put on some comforting music, and let the magic of tradition unfold in your kitchen. I invite you to create your own memories and stories around this simple, yet incredibly rewarding recipe. The taste is unforgettable, but the feeling is even more so. The time spent creating these is a precious gift in itself. Whether you share them with loved ones or enjoy them quietly by yourself, they offer a moment of comfort and joy.

The process is therapeutic, the end result delicious, and the memory priceless. It truly is more than just a recipe; it's a journey, a story, a tradition. It’s an invitation to connect with your heritage, to celebrate the simple things, and to share the love baked into every bite. From my kitchen to yours, I hope you enjoy these Maarud as much as I do.

These date filled rolls are not only a culinary delight but also a perfect example of how a simple recipe can hold so much meaning. Making them transports me to childhood memories spent with my grandmother. The aroma of the baking cookies reminds me of her warm embrace and gentle hands. And the taste? It's a taste of home, of family, of love and tradition that will surely become cherished moments in your life too.
