NYC Cheesecake

Purity is a hallmark of the New York Cheesecake. While others may mix cheeses and garnish with fruity toppings, the New York cake is made with 100 percent cream cheese and unadorned. The most famous of New York's cakes, Juniors, eschews the typical graham cracker crust for a simple sponge base, putting further focus on the cheese. Although I love Juniors for many reasons, I am most decidedly a graham cracker crust guy.

Step-by-step

  • For the crust: Preheat the oven to 350°F. Spray a 3-inch-deep, 9-inch round springform pan with cooking spray. Wrap the bottom and side of the pan with 2 layers of foil.
  • In a bowl, toss together the graham cracker crumbs, sugar, salt, and nutmeg. Slowly drizzle in the butter, tossing it through the crumbs until it looks like the consistency of wet sand.
  • Pour the graham cracker mixture into the pan and spread evenly over the bottom. With a flat-bottomed glass or measuring cup, firmly press the crumbs into the pan to form an even surface, making sure the crumbs reach the edge of the pan all the way around.
  • Bake the crust for 10 minutes. It won’t look any different when its done. Let cool for 10 minutes.
  • For the filling: Reduce the oven temperature to 300°F. Boil some water and place a large roasting pan in the oven.
  • In the bowl of a stand mixer with the paddle attachment, cream together the cream cheese and sugar. Add the flour, zest and juice, vanilla, and salt. With the mixer still running, add the eggs and yolks one or two at a time, then the sour cream.
  • Pour the mixture over the crust.
  • Place the cake in the roasting pan and carefully add boiling water to come about 1 inch up the outside of the springform pan.
  • Bake the cake for 60 to 70 minutes, until the cake is set but still a little jiggly in the middle.
  • Turn off the oven and prop the door open slightly with a wooden spoon to let the oven and cake cool for about an hour.
  • Refrigerate for several hours before serving.

The Allure of a Classic New York Cheesecake

There's something undeniably magical about a perfectly baked New York cheesecake. The creamy, rich texture, the subtle tang of the cream cheese, the delicate crunch of the graham cracker crust – it's a symphony of flavors and textures that transcends mere dessert; it's an experience. For years, I've been captivated by this iconic treat, its simplicity belying a depth of flavor that’s hard to resist. The beauty of a true New York cheesecake lies in its purity. No fussy garnishes, no extravagant additions – just the pure, unadulterated goodness of cream cheese, sugar, and a perfectly baked crust. It's a testament to the quality of the ingredients and the skill of the baker.

My love affair with cheesecake began unexpectedly. I wasn't a big dessert person, tending towards savory dishes and hearty meals. However, a chance encounter with a slice of New York cheesecake at a small cafe changed everything. That first bite – the creamy richness melting in my mouth, the perfect balance of sweet and tangy – was a revelation. From that moment on, I was hooked. I started experimenting, poring over recipes, and perfecting my own version of this classic dessert. Each attempt was a lesson, a step closer to achieving that perfect balance of textures and flavors.

The process itself is almost meditative. The careful creaming of the cream cheese and sugar, the gentle folding in of the eggs, the anticipation as the cake bakes in its water bath – it's a culinary ritual that connects me to something timeless and comforting. And then, there’s the wait. The hours spent in the refrigerator, a period of anticipation that only heightens the pleasure of the final reveal. The first slice, still slightly warm from the oven, is a moment of pure bliss.

The quiet concentration required to perfect the recipe creates a sense of calm, a meditative state that's both rewarding and therapeutic. And then, of course, there is the sheer joy of sharing the finished product. The smiles, the satisfied sighs, the compliments – it's a reminder that even the simplest things can bring immense happiness.
