Step-by-step

  • Using a large pan, I like to use my cast iron pan, but any pan will work.
  • Pour approx. 1-inch of oil in the pan.
  • Begin heating the oil while you are preparing the tacos.
  • Take your tortilla, and put about a 1/3 – 1/2 cup of shredded beef in each taco shell.
  • Fold in half and insert 3 toothpicks – one at the top, and one on each side.
  • Now, they’re ready to put in the hot oil.
  • Depending on how big your pan is will depend on how many you can get done at one time, (I can usually fit 3 at a time).
  • You will see that these brown up really fast!
  • Using a metal tong, you will flip over each one until both sides are brown.

My Favorite Weeknight Meal: Shredded Beef Tacos

As a busy working mom, finding quick and easy dinners that the whole family enjoys is a constant challenge. Between school pick-ups, after-school activities, and the never-ending laundry pile, the last thing I want to do is spend hours in the kitchen. That's why I've developed a go-to recipe that's both delicious and surprisingly simple: Shredded Beef Tacos.

These tacos are a lifesaver on busy weeknights. The shredded beef can be prepped ahead of time – even a day or two in advance – making weeknight cooking a breeze. I usually slow cook a chuck roast on the weekend, shred it, and store it in the fridge. Then, when dinner time rolls around, it’s simply a matter of heating the beef and assembling the tacos. The kids love helping with this part – it's a fun and engaging way for them to participate in the meal preparation.

The beauty of this recipe lies in its versatility. You can customize it to suit everyone's tastes. Some nights, we go classic with shredded lettuce, cheese, and salsa. Other nights, I might add a dollop of sour cream, some black olives, or a sprinkle of fresh cilantro. Even the tortillas can be swapped out – corn or flour, it’s all a matter of personal preference. And for a little extra indulgence, a scoop of guacamole or a sprinkle of fresh avocado never hurt!

What makes these tacos truly special isn't just the ease of preparation or the delicious flavor; it's the memories they create. The aroma of sizzling beef and the happy chatter around the dinner table as we all assemble our own personalized tacos are some of my favorite moments of the week. It’s a simple meal, yes, but it’s also a reminder to slow down, connect with my family, and enjoy the simple pleasures in life. In a world that often feels chaotic and overwhelming, these tacos offer a much-needed sense of calm and comfort.

Beyond the weeknight convenience, these tacos are also perfect for parties and gatherings. They are easily scaled up to feed a crowd and are always a hit with guests of all ages. I’ve served them at countless potlucks, birthday parties, and casual get-togethers, and they're consistently one of the first dishes to disappear. The simple yet satisfying flavors appeal to a broad range of palates, making them a crowd-pleasing choice for any occasion.

The best part about this recipe is its adaptability. I often adjust the ingredients based on what I have on hand or what's in season. Sometimes I add a little spice with some jalapeños or a dash of your favorite hot sauce. Other times, I might use different types of cheese, or experiment with different toppings like pickled onions or roasted corn salsa. The possibilities are truly endless. The flexibility of this recipe makes it a great option for meal prepping or simply adapting to dietary needs or preferences.

So, if you're looking for a reliable, delicious, and easy-to-make weeknight dinner that the whole family will love, look no further than my Shredded Beef Tacos. It's a recipe that has become a staple in our home, a comforting and familiar meal that brings us together at the end of a busy day. And beyond that, it’s a testament to the power of simple ingredients transformed into something truly special – a dish that's as much about the love and laughter shared around the table as it is about the delightful flavors themselves.
