Step-by-step

  • Make sure the water temp is between 110F and 115F.
  • Whisk wine, water, and yeast in a medium bowl until yeast has dissolved.
  • Add honey, salt and olive oil and stir.
  • Add semolina and flour and no matter how dry it looks, work it with a spoon and your fingers until it comes together as a soft dough.
  • Add more water one tablespoon at a time if you need, but this usually isn’t necessary. It is a very forgiving dough!
  • Sprinkle some flour on the counter and knead the dough for a minute or two.
  • Coat the inside of the bowl with olive oil.
  • Put the dough back in, turning to coat the top with oil.
  • Cover and let rise for an hour or up to two, until it is doubled. You can also pop it in the fridge and just let it sit out for twenty minutes or so before rolling out.
  • (Easiest way to tell if a dough has risen enough? Dip two fingers in flour, and press them into the dough and if the impression stays, it’s good to go. If it pops back, let it go until it doesn’t.)
