Step-by-step

  • Clean chicken of all sinews, fat and skin/bone remnants. In a medium bowl whisk together egg whites, first amount of mustard and bourbon. In a separate bowl, mix pecans and breadcrumbs.
  • Dredge chicken in egg mixture, then in crumb mixture. Pat/press crumb mixture firmly onto chicken breasts. Add oil to hot OVEN PROOF pan and place chicken breasts in pan. Brown on one side and turn over. Once breasts are turned, place pan in a 400 F (200 C) oven for 12 - 15 minutes or until breasts are cooked through. Remove pan from oven and keep warm.
  • Pour cream into another hot pan with second amount of mustard. Bring to a boil and reduce until thickened. (I have, on occasion, added 1 T of bourbon/scotch to the sauce for an extra kick).
  • Slice chicken on the bias and arrange on plate. Pour sauce on top.

My Go-To Pecan-Crusted Chicken: A Weeknight Winner

As a busy working mom, I'm always on the lookout for recipes that are both delicious and easy to make. This Pecan-Studded Chicken Breast recipe has become a staple in my household. It's elegant enough for a dinner party, yet simple enough for a weeknight meal. The crispy pecan crust adds a delightful textural contrast to the juicy chicken, and the creamy Dijon sauce is the perfect complement. It's a dish that always impresses, no matter the occasion.

What I love most about this recipe is its versatility. I often adjust it based on what I have on hand. Sometimes I'll add a splash of white wine to the sauce for extra depth of flavor. Other times, I'll swap the pecans for walnuts or almonds, depending on my mood and what's in my pantry. The beauty of cooking, I've found, is in the experimentation and the ability to adapt a recipe to your own tastes and preferences. It's a truly satisfying feeling to create something delicious and customized.

The preparation is straightforward and doesn't require any specialized culinary skills. The steps are simple and easy to follow, even for novice cooks. I often find myself prepping the chicken while my kids are doing homework, making it a seamless part of our evening routine. This recipe teaches my children about cooking, too – it’s nice to have them involved in the process! This meal often becomes a family affair, a time for us to connect while we create something together.

The dish is wonderfully satisfying and leaves everyone feeling content and happy. It's a meal that brings people together, a comforting classic that never fails to please. And the cleanup is minimal, which is always a bonus after a long day! The flavors blend perfectly, creating a harmonious balance that satisfies my palate every single time. The crispy texture of the crust combined with the tender, juicy chicken is a match made in culinary heaven. It’s a recipe that I’ve passed on to friends and family, and it’s always been a resounding success. I encourage you to try it, and perhaps even make it your own by adding your personal touches.

Beyond the Recipe: This dish isn't just about the food; it's about the memories it creates. I often think back to the times I've made this dish – from family gatherings to quiet weeknights at home. It’s a dish that evokes a sense of warmth and comfort, a symbol of togetherness and simple pleasures. And that, to me, is what makes it truly special. It's a recipe that I'll continue to cherish and share for years to come. The feeling of accomplishment in creating a delicious meal for my loved ones is irreplaceable.

Tips and Variations:

  • Spice it up: Add a pinch of cayenne pepper or some chopped jalapeños to the breadcrumb mixture for a little kick.
  • Herb it up: Incorporate fresh herbs like thyme or rosemary into the breadcrumb mixture for an added layer of flavor.
  • Make it a complete meal: Serve the chicken with roasted vegetables, a fresh salad, or your favorite side dish.
  • Leftovers: The chicken is just as delicious the next day, making it perfect for lunch or a quick dinner.

I truly believe that cooking is a form of self-expression, a way to nourish not only our bodies but also our souls. And this recipe, simple as it may seem, is a testament to that belief. It’s a dish that represents more than just a meal; it represents a moment of connection, a chance to create something beautiful, and a reminder of the simple joys in life.
