Step-by-step

  • Brown the bones in a 425F oven for 15 minutes, turning occasionally.
  • In a large stockpot, simmer the chopped leek in 1/2 cup water, covered, until the leek turns translucent, about 5 to 10 minutes. Add the carrot and celery and stir, uncovered, letting simmer for 2 minutes.
  • Pour in the cognac, and bring up to a boil; as soon as it hits a boil, reduce the heat slightly and toss in the onion, garlic and bones. Stir, then add the water. Do not boil; instead, put over medium-low heat, and let creep up to a simmer.
  • Take 2 pieces of the leek top, and sandwich the bay leaf and the fresh herbs between the leek pieces. Tie together with twine, to make your bouquet garni. Add to the stock, along with the black peppercorns.
  • Simmer, uncovered, for 4 to 5 hours, skimming off any foam from time to time.
  • Strain.

My Unexpected Culinary Adventure: A Lamb and Rabbit Stock Story

As a busy professional, time in the kitchen is a luxury. My days are a whirlwind of meetings, presentations, and deadlines, leaving little room for elaborate cooking projects. Yet, the desire for nourishing, homemade meals persists. This is where my recent adventure with lamb and rabbit stock began – an adventure that surprised me with its simplicity and the rich rewards it offered.

The recipe itself came from a rather unexpected source – an old EAT-L digest email from 1997! I stumbled upon it while researching bone broth recipes. Intrigued by the combination of lamb and rabbit bones, I decided to give it a try. The initial apprehension about the lengthy simmering process quickly faded as I realized how hands-off the recipe truly was. After the initial preparations – browning the bones, sautéing the aromatics – the stock simply simmered away on the stovetop, filling my apartment with the most comforting aroma. It was a perfect opportunity to catch up on emails, read a book, or simply relax and enjoy the quiet hum of the kitchen.

The process of making the stock wasn’t merely about the cooking; it was a journey of sensory experiences. The subtle sweetness of the carrots, the earthy notes of the celery, the pungent aroma of the garlic and herbs – all blended together to create a symphony of flavors that slowly unfurled as the stock simmered. Each careful skimming of the foam was a moment of mindful interaction with the simmering liquid, a small act that enhanced the clarity and depth of the final product. I found myself completely absorbed in the process, the mundane act of cooking transformed into a meditative exercise. And the outcome? A rich, deeply flavorful stock that exceeded all expectations. It was far more than just a culinary ingredient; it was a testament to patience, to the transformative power of slow cooking, and to the surprising rewards of embracing a somewhat unexpected recipe.

The resulting stock, a rich, deep amber liquid, possessed a complex flavor profile. The lamb and rabbit bones lent a savory depth, while the aromatic vegetables imparted subtle sweetness and complexity. The subtle hints of cognac added a luxurious touch, elevating the stock beyond mere sustenance to an experience. It was a revelation – a reminder that simple ingredients, when treated with care and attention, can yield extraordinary results. This stock became the foundation for countless dishes: hearty soups, flavorful sauces, and nourishing broths. Each time I used it, I was reminded of the journey it represented – a journey of discovery, of patience, and of the transformative power of simple ingredients, skillfully crafted into something extraordinary.

This experience resonated deeply with my lifestyle. The slow-cooked nature of the recipe fit seamlessly into my busy schedule. The long simmering time required minimal hands-on involvement, freeing me to focus on other tasks. Yet, the result was something truly special – a flavorful, nutritious stock that added depth and richness to my meals. It was a testament to the fact that even amidst a busy lifestyle, we can find time for nourishing, homemade meals, a small act of self-care that goes a long way.
