Step-by-step

  • Cut bacon in medium dice and cook it in a skillet over medium-low heat until crispy. Set aside.
  • Season chicken breasts with salt, pepper, and the dried spices.
  • Heat grill over high heat for at least 5 minutes. Grease grates, place chicken on grill over medium heat.
  • Let cook until almost done. When chicken has an internal temperature of 150 degrees, baste with BBQ sauce on both sides and continue cooking until it reaches an internal temperature of 165 degrees. (Don't baste the chicken as soon as it hits the grill or else the sugars in the BBQ sauce will burn.)
  • When chicken is cooked through, place half of the bacon on top of each piece.
  • Mix the cheeses together and spread evenly over each piece.
  • Place top of grill down and let the cheese melt, this will only take a couple minutes.
  • Serve and enjoy!

Monterey Chicken: A Weeknight Winner

As a busy working mom, I’m always on the lookout for quick, delicious, and family-friendly meals. This Monterey Chicken recipe has become a staple in our household, a true weeknight lifesaver. It's flavorful, satisfying, and surprisingly easy to make, even on those crazy evenings when time is of the essence. The beautiful thing about this recipe is its adaptability. Feel free to experiment with different cheeses – pepper jack would add a nice kick, or you could stick with a classic cheddar if that's what you have on hand. The same goes for the BBQ sauce; use your favorite, or even try a chipotle BBQ sauce for a smoky twist.

The aroma alone is enough to make your family rush to the table. That irresistible blend of smoky bacon, juicy chicken, and melty cheese is a guaranteed crowd-pleaser. The kids love it, my husband raves about it, and let’s be honest, even I sneak a second piece (or three!). But beyond its deliciousness, this recipe is practical. It's quick enough to whip up on a busy weeknight, yet elegant enough to impress guests. It's also a great way to use up leftover BBQ sauce, or to finally try that new bottle you’ve been eyeing at the store.

Beyond the Grill: While grilling is my preferred method, this recipe is incredibly versatile. You can easily adapt it for the oven or even a skillet. For oven-baked Monterey Chicken, simply bake the seasoned chicken breasts at 375°F (190°C) until cooked through, then top with bacon and cheese and broil until the cheese is melted and bubbly. For a skillet version, cook the chicken in a skillet over medium heat until cooked through, then top with bacon and cheese and cover until melted. No matter how you choose to make it, the results are consistently delicious.

Serving Suggestions: This Monterey Chicken pairs perfectly with a simple side salad, some roasted vegetables, or even some fluffy mashed potatoes. The combination of flavors and textures makes for a well-rounded and satisfying meal. Sometimes I’ll serve it with a side of corn on the cob for a truly summery feel. Other times, I'll opt for a simple green salad with a light vinaigrette, adding a refreshing contrast to the richness of the chicken.

Make it Your Own: The beauty of cooking is the ability to personalize recipes to your own taste. Don’t be afraid to experiment! Try adding different spices, using different types of cheese, or even incorporating other ingredients like sautéed onions or peppers. The possibilities are endless! This recipe is a fantastic jumping-off point, a foundation you can build upon to create your own unique culinary masterpiece.

So, the next time you’re looking for a quick, easy, and incredibly delicious dinner, give this Monterey Chicken recipe a try. It's a winner for busy weeknights and special occasions alike. You won’t be disappointed!
