  • Preparing Time: 30 minutes
  • Total Time: 1 hour and 10 minutes
  • Served Person: 8

Step-by-step

  • Preheat oven to 375° F. Lightly spray a large cookie sheet with nonstick spray.
  • In a large bowl, whisk together the two egg yolks, buttermilk, and a hefty pinch of cayenne pepper, and whisk well.
  • With clean hands or wearing kitchen gloves, pound out chicken breasts to approximately 1/2" thickness and add to the buttermilk mixture (toss to coat well).
  • Grind/crush the Ruffles Jalapeño Popper Flavour Potato Chips.
  • Place crushed chips in a shallow large baking dish.
  • Pull one piece of chicken at a time out of the buttermilk and gently shake to remove some of the excess.
  • Dip into the chips and coat thoroughly on both sides.
  • Place on prepared baking sheet. Repeat until all chicken breasts are thoroughly coated.
  • Cover with plastic wrap and set in the fridge for about half an hour.
  • Place chicken in the oven on the middle rack, and place a pan of water with the 2 lemon slices, 3 sprigs fresh garden thyme, 2 sprigs fresh garden rosemary, and 1 large sprig fresh garden sage submerged in the water on the rack below the middle rack pan of chicken.
  • Bake for 25-35 minutes, until cooked through and the coating is a nice golden-copper brown.
  • While the chicken's baking, prepare the Jalapeño Ranch Dipping Sauce.
  • Jalapeño Ranch Dipping Sauce: In a medium bowl, blend together until smooth and creamy the 1/4 cup mayo, 1/2 cup low-fat sour cream, 1/8 cup low-fat buttermilk, 1/2 cup Ranch Dressing, 1/2 teaspoon salt, 1/2 teaspoon fresh cracked peppercorn, 1/2 teaspoon garlic powder, and a dash of paprika.
  • Add the 6 large fresh sweet basil leaves (torn fine and bruised), 1 teaspoon fresh minced/chopped dill weed, a small handful of chopped fine fresh garlic chives, and the 6 finely minced hot pickled jalapeño slices.
  • Serve chicken oven-warm with a nice dollop of dipping sauce on the side. Great with homemade mac 'n' cheese and honey dill oven-roasted carrots or maple garlic dill roasted parsnips and/or corn-on-the-cob as sides.

My Favorite Family Sunday Dinner: Ruffles Jalapeño Popper Crusted Chicken

Sundays at our farm are all about family. The aroma of home-cooked meals fills the air, laughter echoes from the kitchen, and the table is always overflowing with love (and delicious food!). Recently, I decided to try something new for our Sunday dinner: a crispy, flavorful chicken dish that's become a new family favorite. I call it Ruffles Jalapeño Popper Crusted Chicken, and it's surprisingly easy to make.

The inspiration struck me while I was browsing the grocery store. I spotted a bag of Ruffles Jalapeño Popper chips and an idea sparked. Why not use these flavorful chips as a crunchy breading for chicken? The result was unbelievably delicious. The spicy jalapeño flavor combined with the satisfying crunch of the chips creates a truly unforgettable taste sensation. The chicken is juicy and tender on the inside, while the outside boasts a delightfully crispy, savory coating.

But the culinary adventure doesn't stop there! I wanted to complement the chicken with a dipping sauce that would enhance the jalapeño flavor and add a creamy element to the dish. My homemade Jalapeño Ranch Dipping Sauce is the perfect counterpart, offering a cooling contrast to the spicy chicken. It's a delightful blend of creamy ranch dressing, tangy buttermilk, and the perfect touch of spicy jalapeños. The fresh herbs—basil, dill, and chives—add a vibrant, herbaceous note that elevates the overall flavor profile.

This recipe is surprisingly versatile. You can adjust the level of spiciness by using more or fewer jalapeños in the breading and the dipping sauce. It’s also a great way to use up leftover chips, turning a simple snack into a sensational main course.

The best part? It's not just delicious; it's also incredibly easy to make. The entire cooking process, from preparing the chicken to baking it to perfection, takes less than an hour. And the cleanup is relatively straightforward, which is always a bonus after a busy week.

Serving this dish is a joyful experience. The vibrant golden-brown chicken pieces, glistening with their crispy chip coating, are a feast for the eyes. The creamy jalapeño ranch sauce adds a beautiful touch, and the accompanying sides—I usually serve it with homemade mac and cheese and honey-dill roasted carrots—create a well-balanced meal that satisfies everyone's cravings.

This Ruffles Jalapeño Popper Crusted Chicken has quickly become a staple in our Sunday dinners, a testament to its deliciousness and ease of preparation. It's more than just a recipe; it's a celebration of family, good food, and the simple joys of farm life. I highly recommend trying it – I bet it will become a favorite in your household, too!

Tips and Variations:

  • For extra flavor, marinate the chicken in buttermilk for a few hours before breading.
  • If you don't have fresh herbs, you can use dried herbs instead. Just use about 1/3 of the amount called for in the recipe.
  • Feel free to experiment with different types of chips for the breading. Other flavored chips would also work well.
  • To make the dish even spicier, add a pinch of red pepper flakes to the breading or the dipping sauce.
