I got this recipe in an email from someone I receive a newsletter from. She used the boxed macaroni and cheese. I think it would be great to make it from scratch (due to allergies I can't use 99.9% of the boxed, canned, or frozen foods that are on the market). This would be great in the winter.

Step-by-step

  • Bring a large pot of water to a boil. Remove the cheese packets from both boxes of mac and cheese and set them aside. When the water comes to a boil, cook the mac and cheese dinners according to package directions. Drain.
  • Meanwhile, in a large skillet, cook and crumble the beef with the salt, pepper, onion and hot dogs until the beef is no longer pink. Drain if necessary. Return the mixture to the skillet. Add the Worcestershire sauce, chili powder, cumin, tomato sauce and water to the skillet. Bring to a boil and then reduce heat to medium-low heat, stirring occasionally, until it reaches your desired consistency. (I like ours the consistency of Sloppy Joe's, but make yours how you like it).
  • After the pasta has been drained, return it to the pan and add the butter, milk and cheese powder. Stir to combine. Add the chili dog sauce to the mac and cheese and stir well. Serve.
Most cooks ruin this dish by dumping the heavy chili directly onto cold pasta without letting the sauce reduce past a watery stage. Simmer the beef mixture until it coats the back of a wooden spoon. Without that crucial reduction step, the starches in the pasta turn to mush within three minutes.

Balancing the Heavy Plate

Heavy starches require sharp acidity to cut through the fat load. Serve crisp dill pickles or a raw vinegar-based coleslaw on the side. The high fat content coats the palate quickly. Acidic crunch resets taste buds between bites.

Temperature Contrast

Cold, crisp vegetables provide necessary structural contrast against the dense, soft pasta. Toss shredded green cabbage with apple cider vinegar instead of mayonnaise. Avoid heavy creamy salads entirely.

Storage and Reheating

Store leftovers in an airtight glass container for up to three days in the refrigerator. Freezing separates the dairy emulsions permanently. Reheat portions in a saucepan over medium-low heat with two tablespoons of milk to restore moisture.
