Easy Grilled Chicken

Tonight for dinner I'm grilling a simple skin-on, bone-in chicken breast. I like leaving the skin on and bone in so that the chicken is really moist. We're at our cabin so we almost always grill. The spice I use is Boswell's Blends; Fowl-n-Feather Seasoning. I bought it at one of those home shows and use it all the time. Simple...simple.. However, if you don't have access to Boswell's blend, the spices in the recipe are for a Greek-style grilled chicken. Can use boneless skewers, bone-in chicken or boneless. Your preference. The cooking is set for bone-in.

Easy Grilled Chicken: A Cabin in the Woods Delight

The aroma of grilling chicken fills the air, a symphony of smoky goodness mingling with the crisp evening breeze. We're nestled in our cozy cabin, far from the hustle and bustle of city life, where the simple pleasures of a delicious meal take center stage. Tonight's star is a succulent, skin-on, bone-in chicken breast, grilled to perfection. I love leaving the skin on and the bone in; it keeps the chicken unbelievably juicy and flavorful. Grilling is practically a nightly ritual here at the cabin – it's just one of those things that feels so right in this peaceful setting.

My go-to spice blend is Boswell's Blends; Fowl-n-Feather Seasoning – a happy discovery from a home show. But don't worry if you can't find it. The recipe also includes a fantastic Greek-style spice blend, so you can easily adapt it to your pantry staples. Whether you're using boneless, skinless breasts, bone-in pieces, or even chicken skewers, this recipe is incredibly versatile. Tonight, we're keeping it classic with bone-in breasts, letting the natural flavors shine.

The grilling process is straightforward. I prefer a slow cook, allowing the chicken to gently absorb the smoky flavors of the grill. However, if you’re short on time, crank up the heat initially, then reduce it to finish cooking. A meat thermometer is your best friend here; ensure the internal temperature reaches 160-165 degrees F for perfectly cooked, safe-to-eat chicken. While the chicken sizzles, we savor the moment, enjoying a relaxing happy hour on the patio. A refreshing Blue Moon with an orange slice for me, and a Malibu rum and Diet Coke for my husband. It's these simple pleasures that make a meal truly special.

Tonight's culinary adventure doesn't stop at the chicken. We're complementing our grilled masterpiece with a vibrant green salad, overflowing with fresh ingredients. It's a delightful counterpoint to the richness of the chicken, a refreshing burst of freshness that balances the flavors perfectly. Simple, yet utterly satisfying, this dinner embodies the spirit of our cabin retreat – relaxation, good company, and the sheer joy of sharing a delicious, home-cooked meal. The simplicity is what makes this meal so lovely.
