Pollo al Curry

I fell in love with chicken curry during my honeymoon in Thailand. My husband Ivano and I would go to lunch wherever we saw locals queuing for a table, and we'd choose a different dish each time to try something new. Chicken breast curry with basmati rice is a very popular main course in Asia, and lately it's becoming increasingly appreciated in our parts too. My parents, however, had never tasted it, so during a culinary Thursday I tried making it, and they liked it too. There are various ways to cook chicken curry; the recipe is very simple and the result is similar to what I tasted during my trip—a successful experiment, I'd say ;) I wanted to apologize for yesterday's post; I don't usually tell unpleasant events that concern my life. I don't like to spread sadness and I don't like to be commiserated with. I've always said that my blog should remain a happy island, and I didn't want to sadden you with Minu's story. I don't know what came over me, sorry. Open and closed parenthesis, I leave you with today's recipe and wish you a new day ;)
