Graham Cracker Toffee (aka Graham Cracker Crack)

The toffee is fast and easy to make and it lives up to its name because it's supremely addictive. It's sweet, buttery with caramel and nutty undertones, crunchy, and chewy all in one. The slight crunch of the graham crackers is a perfect base for the buttery, caramely, brown sugar-based toffee topping and the butter takes on the rich, nutty flavor quality of browned butter. Semi-sweet chocolate chips balance the sweetness of the toffee while toffee bits add crunch and extra flavor. If you're looking for a recipe that will disappear at holiday parties, cookie exchanges, neighborhood potlucks, or school bake sales, this is a guaranteed winner.

Step-by-step

  • Preheat oven to 350F. Line a 9x13-inch pan with aluminum foil and spray with cooking spray.
  • Place graham crackers in pan in a single, flat layer so pan is completely covered with them. You will have to break some crackers to fill in the smaller spaces at the edges. It’s ok if there are slight gaps, doesn’t have to be perfect; set aside.
  • To a medium, heavy-bottomed saucepan with high sides, add the butter, brown sugar, salt, and heat over medium-high heat to melt. Stir constantly until butter has melted.
  • After butter has melted, allow mixture to boil for about 4 1/2 to 5 minutes at a medium-fast boil (lots of bubbles). Stir constantly to prevent burning. As you approach the 4 minute mark, mixture should seem thickened with the consistency of medium-thick caramel sauce. I pulled mine off the heat at 4 1/2 minutes because it was thick enough.
  • Evenly pour mixture over graham crackers.
  • Bake for about 7 minutes, or until there’s bubbling around the edges.
  • Remove pan from oven, evenly sprinkle with chocolate chips, return pan to oven, and bake for about 2 minutes, or until chocolate chips are glistening and have softened.
  • Use a spatula to smooth the chocolate chips into an even, smooth layer of melted chocolate.
  • Evenly sprinkle with toffee bits.
  • Allow toffee to cool for about 2 to 3 hours, or until chocolate has set up and dessert is sliceable. Notes – I made this on a very warm day and after 4 hours cooling at room temp, the chocolate was still on the melty side. I didn’t refrigerate it because of the condensation effect that happens after chocolate has been refrigerated and then comes to room temp and you can see fine water droplets on it, but this is merely a cosmetic issue. If you’re in a hurry you can expedite the cooling process by refrigerating, noting the condensation effect will occur. Toffee will keep airtight at room temp for up to 2 weeks, or in the fridge for up to 1 months, or freezer for up to 3 months.

My Unexpectedly Addictive Graham Cracker Toffee Adventure

As a busy working mom, I’m always on the lookout for recipes that are both delicious and easy to make. Life is hectic enough without spending hours in the kitchen! That’s why I was so thrilled when I stumbled upon this Graham Cracker Toffee recipe. It promised addictive sweetness, a satisfying crunch, and most importantly, minimal effort. Let me tell you, it didn't disappoint.

The beauty of this recipe lies in its simplicity. The ingredients are basic – butter, brown sugar, graham crackers, chocolate chips – things I usually have on hand. The process itself is surprisingly straightforward. Melt the butter and brown sugar, pour it over a layer of graham crackers, bake until bubbly, sprinkle with chocolate chips and toffee bits, and let it cool. That's it! No fancy techniques or specialized equipment required. Even on a weeknight after a long day at the office and dealing with after-school activities, I could whip this up without feeling overwhelmed.

The result? A symphony of textures and flavors. The buttery, caramelized topping provides a wonderful sweetness, balanced perfectly by the semi-sweet chocolate chips. The graham crackers offer a delightful crunch, and the toffee bits add an extra layer of textural complexity. It's the kind of treat that's both comforting and exciting. The rich, nutty flavor of the browned butter adds an unexpected depth, elevating this simple toffee to a whole new level. Honestly, it was so good that I could barely stop myself from eating the entire pan in one sitting. I had to hide some of it to make sure there was any left for the kids’ school bake sale!

Tips and Tricks for Toffee Success:

While the recipe is incredibly easy, here are a few things I learned from my toffee-making adventures that might help you:

  • Don't overbake: Keep a close eye on the toffee in the oven. Overbaking can lead to a burnt or overly hard toffee.
  • Even distribution is key: Make sure the melted butter and sugar mixture is evenly spread over the graham crackers. This ensures consistent baking and a uniform toffee texture.
  • Cooling time is crucial: Patience is a virtue when it comes to toffee. Allow it to cool completely before cutting. This helps the chocolate set and prevents a sticky, messy outcome.
  • Storage solutions: This toffee keeps well, making it a great make-ahead treat. Store it in an airtight container at room temperature for up to two weeks, in the refrigerator for up to a month, or in the freezer for up to three months.

This Graham Cracker Toffee is more than just a recipe; it's a stress reliever, a morale booster, and a guaranteed crowd-pleaser. It’s a perfect addition to holiday gatherings, potlucks, or simply a sweet treat to enjoy with a cup of coffee on a chilly evening.
