Ice Cream: Vanilla

Super easy, absolutely delicious! Added only 5 strawberries to blender but it obviously wasnt enough. Next time, increase berries as it should still come out great. Should be able to add chocolate sauce or other goodies (cookies, cookie dough, etc). I LOVE this after its been churning for about 25-30 minutes. DIVINE! Once frozen, its not as good because it gets hard. You just need to let it sit for 15 minutes before eating after its been in freezer.

Step-by-step

  • The night before, place ice cream churning bowl in freezer to properly chill.
  • The following day, add coconut milk, organic cane sugar, vanilla powder, vanilla extract and salt to high-speed blender and blend on high until completely creamy and smooth for 1-2 minutes to fully dissolve the sugar. Add more cane sugar or maple syrup if it needs more sweetness, or more vanilla if it needs more vanilla flavor.
  • Add mixture directly to chilled ice cream maker and churn according to manufacturer’s instructions - about 45 minutes. It should look like soft serve.
  • Once churned, transfer the ice cream to a large freezer-safe container (such as Tivoli tubs) and use a spoon to smooth the top.
  • Cover securely and freeze for at least 4-6 hours or until firm. Set out for 5-10 minutes before serving to soften - a hot ice cream scoop also eases scooping.
  • Will keep in the freezer for up to 10 days, though best when fresh. Pairs perfectly with pies, cakes, cookies and more!

My Simple Vanilla Ice Cream Adventure

As a busy working mom, finding time for elaborate baking projects is a luxury I rarely afford myself. However, the sweet craving always strikes! That's why I'm always on the lookout for recipes that are both delicious and ridiculously easy. This vanilla ice cream fits the bill perfectly. The simplicity is utterly delightful.

I discovered this recipe while browsing online – it promised an effortless homemade ice cream experience, and it didn’t disappoint. Honestly, the hardest part was remembering to put the ice cream bowl in the freezer the night before! The actual blending and churning took maybe 15 minutes tops. Fifteen minutes to homemade ice cream? Sign me up!

The taste? Oh my goodness. Rich, creamy, and perfectly vanilla-y. It's the kind of ice cream that makes you forget all about those overly-sweet, store-bought versions. The coconut milk gives it such a luscious texture, a delightful richness that other recipes simply lack. I love experimenting with add-ins, though, and will definitely try a berry variation next time.

I particularly enjoy it slightly soft, straight from the ice cream maker, with a texture resembling soft serve. It's unbelievably decadent. However, if you prefer a firmer consistency, simply freeze it longer. Just remember to let it sit for a few minutes before scooping, otherwise, you might find yourself wrestling with a frozen solid block of creamy goodness.

A few tips I've learned along the way:

  • Don't skimp on the vanilla! The more vanilla, the merrier (within reason, of course!). A good quality vanilla extract makes all the difference.
  • Adjust the sweetness to your liking. I prefer a slightly less sweet ice cream, but you can easily adjust the amount of sugar depending on your preference. Maple syrup or agave nectar also work beautifully.
  • Fresh ingredients are key! Using high-quality coconut milk contributes greatly to the rich flavor and creamy texture of the final product.

This easy ice cream is a perfect treat for a warm evening, a delightful dessert after dinner, or a satisfying reward after a long day. It’s the kind of recipe that makes you feel like you've created something truly special, without spending hours in the kitchen. And who doesn't love that? Honestly, the simplicity is a large part of its appeal; quick results with a delicious outcome makes it a perfect treat for any occasion.

The adaptability of this recipe is also wonderful; a splash of coffee, a swirl of chocolate, chunks of fruit – the possibilities are endless. Each addition creates a unique experience that can be tailor-made to your preferences and the season. So go ahead, try this recipe. You might just surprise yourself with how easy and rewarding homemade ice cream can be. You deserve a little bit of easy indulgence. And this is it.

It's become a staple in my household. My kids love it, my husband loves it, and even my fussy neighbor asks for a scoop every now and then. What's not to love about a simple, versatile, and utterly delicious ice cream? So go ahead, give it a try and let me know what you think!
