Step-by-step

  • PLEASE NOTE: This is a BAKED macaroni and cheese, therefore, it will NOT turn out with a lot of extra cheesy sauce as it is absorbed into the pasta while baking. If you require an extra saucy mac & cheese, just reduce the amount of pasta you place into the dish or make more sauce so it is creamier. Thanks so much for making this dish; I hope you enjoy it!
  • Heat oven to 350 degrees. Coat a 3 quart rectangular baking dish with non-stick spray. Bring a large pot of lightly salted water to boiling.
  • Toss all the shredded cheeses together in a large bowl, set aside.
  • Melt butter in a medium-sized saucepan over medium heat. Whisk in the flour until smooth and slightly bubbly.
  • In a thin stream, whisk in the milk. Stir in the onion powder, salt, nutmeg, dried mustard and cayenne.
  • Bring to a boil over medium high heat. Reduce heat and simmer 3 minutes. Remove from heat; whisk in 2 1/2 cups of the cheese mixture and stir until smooth. Cover to retain the heat.
  • Once water boils, add pasta. Cook until your desired doneness, then drain. In the pasta container, stir together the cooked pasta and cheese sauce.
  • Pour half of the mixture into the prepared dish. Sprinkle with a generous cup of the reserved cheese. Spoon remaining cheese-covered pasta into the dish and top with the remaining cheese.
  • Add 1 cup of Japanese Panko Bread crumbs to the top of mixture.
  • Bake at 350 degrees for 30 minutes or until the Panko crumbs are lightly browned and the cheese is bubbly. Cool slightly before serving.

My Unexpected Culinary Adventure: A Four-Cheese Mac & Cheese Story

Life as a busy fitness model isn’t always about kale smoothies and protein shakes. Sometimes, you crave comfort food, that warm hug in a bowl that reminds you of simpler times. This week, that comfort came in the form of a ridiculously decadent four-cheese macaroni and cheese. Now, I know what you’re thinking – macaroni and cheese? Isn’t that a bit…basic? Well, let me tell you, this wasn’t your average boxed mac and cheese. This was a gourmet experience, a creamy, cheesy symphony that danced on my tongue.

It all started with a spontaneous grocery run. I needed something to fuel my post-workout recovery, but the usual options felt dull. My eyes landed on a block of aged cheddar, and suddenly, an idea sparked. Why not go all out? I grabbed a selection of cheeses – sharp cheddar, gruyere, asiago, and fontina – a veritable cheese lover’s dream team. The kitchen transformed into a whirlwind of flour, butter, and milk, with a generous helping of fragrant spices dancing in the air. The process was surprisingly therapeutic. Measuring, whisking, and stirring were meditative acts, a welcome change from the intensity of my training schedule.

The aroma alone was enough to make my mouth water. As the creamy cheese sauce simmered, I couldn’t help but feel a sense of accomplishment. The Ingredients that Made it Special

The secret to this mac and cheese's exquisite flavor was the careful selection of cheeses. The sharp cheddar provided a bold, tangy base, while the gruyere added a nutty complexity. The asiago brought a slightly salty, granular texture, and the fontina offered a smooth, creamy counterpoint. The combination was a masterpiece of cheesy harmony.

The Japanese panko breadcrumbs, a last-minute addition, were a stroke of genius. They added a delightful crunch that perfectly complemented the creamy interior. It elevated the mac and cheese from a simple comfort food to a sophisticated culinary experience.
