My Favorite Weeknight Comfort Food: Instant Pot Chicken and Dumplings

As a busy working mom, time is my most precious commodity. Finding quick, easy, and delicious meals that the whole family will devour is a constant quest. That's why I've fallen head over heels for this Instant Pot Chicken and Dumplings recipe. Forget spending hours slaving over a stove – this recipe delivers warm, comforting goodness in a fraction of the time.

The beauty of this dish lies not only in its speed but also in its adaptability. Feel free to experiment with the vegetables. I often add extra carrots or even some chopped potatoes for added heartiness. The chicken broth provides a savory base, and the addition of milk lends a creamy richness that perfectly complements the fluffy dumplings. The dumplings themselves are a game-changer – using refrigerated biscuits saves precious prep time, resulting in soft, pillowy morsels that melt in your mouth.

This recipe isn’t just for weeknights; it’s perfect for cozy weekend dinners, too. The comforting aroma filling the kitchen is enough to make anyone feel relaxed and at home. It’s a guaranteed crowd-pleaser, perfect for family gatherings or even a simple meal for one. I've even been known to pack leftovers for lunch the next day – it’s just that good!

The Instant Pot simplifies the cooking process immensely. The pressure cooking method ensures the chicken is tender and juicy, while the dumplings cook perfectly alongside it. No more worrying about undercooked chicken or soggy biscuits; this recipe ensures a perfect balance every single time. It's so simple, even a novice cook can achieve restaurant-quality results.

Beyond its ease and deliciousness, this recipe is also incredibly versatile. You can easily customize it to your liking. Want a spicier kick? Add a pinch of cayenne pepper. Prefer a richer flavor? Use cream instead of milk. The possibilities are endless!

The best part? Cleanup is a breeze. Most of the cooking happens in the Instant Pot, minimizing the number of dishes you need to wash. This means more time to relax and enjoy your delicious meal with your loved ones – a true win-win in my book. So, the next time you're craving a comforting, easy meal, give this Instant Pot Chicken and Dumplings recipe a try. You won't be disappointed. It’s a recipe that will quickly become a staple in your family’s dinner rotation, just as it has in mine.

Ingredients I use and my tips:

Chicken: I typically use boneless, skinless chicken breasts for ease, but you can absolutely experiment with bone-in chicken thighs for a richer flavor. Just adjust cooking time as needed. Remember to shred the chicken after cooking for easier serving and a more uniform texture in the dish.

Vegetables: The recipe calls for carrots, celery, and onion, but feel free to add other vegetables like potatoes, peas, or green beans. Experiment to find your favorite combinations!

Broth: Chicken broth forms the base of the flavor. I always opt for a low-sodium broth to control the salt content, and you can even use homemade broth if you have some on hand. Don't hesitate to add more broth if you prefer a more soupy consistency.

Milk: Whole milk adds a delightful creaminess, but you can substitute with 2% or skim milk if preferred. If you're looking for an even richer flavor profile, consider using heavy cream.

Biscuits: Refrigerated biscuits are the key to simplifying this recipe. Cut them into bite-sized pieces for perfect dumpling size. Experiment with different types of biscuits to change the flavors.

Seasoning: The recipe uses simple herbs and spices like oregano, thyme, pepper, and salt. Feel free to customize it to your taste; adding a little garlic powder or paprika would complement the flavors nicely.

Cornstarch (optional): This is added for thickening, only if you want a thicker consistency. Add it slowly and stir until you reach your desired thickness.

This recipe is more than just a meal; it’s a warm hug in a bowl, a testament to simple cooking that yields extraordinary results. It's the perfect blend of convenience and deliciousness – exactly what I look for in a busy weeknight meal. Try it out, and let me know what you think!
