Step-by-step

  • Place the stock and broth in a pot over medium heat.
  • Add onions and cut-up two corn tortillas (into small pieces) and simmer.
  • Add carrots, about a teaspoon of cilantro, and jalapeno(s).
  • Bring to a boil.
  • Reduce to low (level 2).
  • Add chicken chunks (and frozen corn if using frozen).
  • Cook on low for about an hour.
  • After an hour, add fresh corn, zucchini, yellow squash, salt, and simmer 10 minutes more.
  • Taste and make sure all veggies are tender.
  • Add tomatoes to pot just before serving.
  • Garnish soup in bowls with corn, crispy tortilla strips, cheese, cilantro, & fresh lime juice.
  • crispy tortilla strips – I make my own while the soup is cooking. I take fresh corn tortillas, cut them into thin strips, spray them with Pam (& sprinkle w/salt) on a baking sheet, and bake them in the oven on 350 for about 15 minutes or until desired color and crispiness.

My Go-To Comfort Food: Niki's Pappasito's Tortilla Soup

As a busy working mom, finding time to cook a healthy and delicious meal can often feel like a Herculean task. But sometimes, the simplest recipes are the most rewarding, both in terms of flavor and ease of preparation. That's where my version of Pappasito's Tortilla Soup comes in. This recipe isn't just a meal; it's a hug in a bowl, a comforting taste of home that I can whip up even on the busiest of days. The rich chicken broth, the vibrant vegetables, and the satisfying crunch of the tortilla strips create a symphony of textures and flavors that always leave me feeling nourished and content.

The beauty of this soup is its adaptability. I often adjust the ingredients based on what's fresh and available at the market. Sometimes, I’ll add a handful of black beans for extra protein, or swap out the zucchini for other summer vegetables like bell peppers. The key is to not be afraid to experiment and personalize it to your own taste. It’s a recipe that invites creativity, allowing you to explore different flavor combinations and discover your own perfect bowl of comfort. The process itself is incredibly therapeutic for me – the gentle simmering, the fragrant steam rising from the pot, it's a moment of quiet amidst the chaos of everyday life. It's a chance to disconnect, to focus on something nourishing, both for my body and my soul.

The Grilled Chicken Twist: While the original recipe might call for shredded chicken, I’ve discovered that grilling the chicken adds a wonderful smoky depth of flavor that elevates the entire dish. My husband usually handles the grilling, but even if you don't have a grill, pan-searing or baking the chicken works just as well. Seasoning it with a fiesta fajita seasoning blend adds another layer of complexity and excitement. Don’t be afraid to experiment with different spice blends – it's a great way to add your personal touch. The slightly charred edges of the chicken add a satisfying textural contrast to the tender vegetables and soothing broth.

Homemade Tortilla Strips: Making your own tortilla strips is incredibly easy and adds a delightful homemade touch. Unlike store-bought options, they possess a superior crispness and a satisfyingly fresh flavor. Simply slice up some corn tortillas, toss them with a little olive oil (or Pam, as I do!), a sprinkle of salt, and bake them until golden brown and crispy. This simple step takes the soup from good to exceptional. Plus, the aroma filling the kitchen while they bake is absolutely divine.

Beyond the Recipe: This tortilla soup is more than just a meal; it's a symbol of nourishment and connection. Sharing it with loved ones, whether it's a cozy family dinner or a potluck gathering, is a way to bring people together. The communal act of sharing a bowl of warm, flavorful soup fosters a sense of intimacy and togetherness. The happy chatter, the laughter, the shared smiles—these are the true ingredients that make this recipe so special. It’s about slowing down, savoring the flavors, and appreciating the simple pleasures of life.

A Recipe for the Soul: In the whirlwind of daily life, taking time to prepare a wholesome and comforting meal is an act of self-care. This tortilla soup is my recipe for happiness, my little escape from the pressures of daily life. It's a reminder to take a deep breath, to nourish myself both physically and emotionally, and to find joy in the simple act of cooking and sharing a delicious meal. And that, my friends, is something truly priceless.

This soup is a testament to the fact that even the simplest recipes can be incredibly rewarding. It's a testament to the power of good food, good company, and the joy of creating something delicious from scratch. So, next time you’re looking for a hearty, healthy, and incredibly satisfying meal, give this recipe a try. You won't regret it.
