  • Using a clean towel, squeeze all the liquid (water) from the zucchini.
  • In a big bowl, mix the zucchini, onion, flour, cheese, garlic and egg. Season to taste.
  • Heat the olive oil in a large non-stick pan over medium heat.
  • Add 1/4 cup to the zucchini mix and flatten with a spatula.
  • Cook until the bottom is golden brown, for 2 - 3 minutes.
  • Flip it carefully and cook the other side, for about 2 more minutes.
  • Repeat until you’ve used all the mixture.
  • Serve immediately with tomato sauce.
