  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Place prosciutto slices on baking sheet and bake for 10-15 minutes, or until crisp. Cool, then add to a food processor with pistachios and toasted sourdough bread; process until finely crumbed.
  • Add butter to a large skillet; brown lightly (about 2 minutes).
  • Add bread crumb mixture and toast for about 5 minutes, or until golden. Add more butter if needed. Season with salt and pepper.
  • Remove pangrattato and set aside.
  • Make pesto: Add sage, kale, olive oil, and Manchego cheese to a food processor; process until a pesto forms. Season with salt and pepper.
  • Bring salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
