  • Preparing Time: 15 minutes
  • Total Time: 30 minutes

Step-by-step

  • Line a sheet pan with parchment paper and set oven to 275F (135C).
  • In a mixing bowl, add the rolled oats, pecans, coconut, sunflower seeds, salt, cinnamon, and chocolate chips (optional). Set aside.
  • In a spouted measuring cup, combine the melted coconut oil, maple syrup and vanilla bean paste. Stir. You will see separation.
  • Pour wet ingredients into the dry. Using a wooden spoon or your hands, mix throughly, ensuring that each, individual dry ingredient gets some wet on it.
  • Press the granola into the pan, in one even layer.
  • Place the pan in preheated oven and bake at 275F (135C) for 1 hour.
  • Rotate the pan, turn the oven up to 300F (148C), and bake for an additional 20-25 minutes. Do not stir the granola, or clustering will be greatly reduced.
  • Remove from the oven. The granola will be golden and soft to the touch. It will firm up as it cools.
  • Allow the granola to cool completely in the pan before transferring to a storage container. Doing this will ensure crunchy clusters.
  • If desired, toss in your favorite dried fruit such as chopped Turkish apricot, sour cherries, cranberries or raisins.
  • Store in a covered container, at room temperature, for up to three weeks. Granola can also be frozen for up to one month.
My Homemade Maple Pecan Granola: A Crunchy, Sweet Treat

My Homemade Maple Pecan Granola: A Crunchy, Sweet Treat

As a busy working mom, finding time for myself, let alone baking, can feel like an impossible task. But there's something deeply satisfying about creating something delicious from scratch, something that nourishes my family and brings a little joy to our hectic days. That's why I've become a huge fan of homemade granola. It's customizable, relatively quick to make (especially compared to some baking projects!), and tastes a million times better than anything you'll find in the store. This Maple Pecan Granola recipe is my go-to, a perfect balance of sweet and crunchy that's become a staple in our breakfast routine (and sometimes, a late-night snack!).

What makes this granola stand out? First, the simplicity. You don't need a cupboard full of exotic ingredients or specialized baking skills. Just a handful of everyday pantry staples – oats, pecans, coconut, a touch of maple syrup – and you're well on your way to granola perfection. Second, the control over the ingredients. I'm always wary of added sugars and artificial ingredients in store-bought granola, so making it myself allows me to carefully select high-quality, natural ingredients. Finally, it's unbelievably versatile! I often adapt this recipe based on my family's whims. Sometimes we add dried cranberries for a tart burst of flavor; other times, a sprinkle of dark chocolate chips for an extra decadent touch. The possibilities are endless.

The process itself is incredibly therapeutic. The act of measuring, mixing, and pressing the granola into the pan is a welcome break from the usual whirlwind of my day. The smell of the baking granola, that warm, nutty aroma infused with the sweetness of maple, is a comforting reminder that even amidst chaos, there's time for simple pleasures. Plus, nothing beats the sight of that golden-brown granola, crisp and perfectly clustered, cooling on the baking sheet. It's a small victory, a delicious reminder that even in the midst of a busy week, I can create something beautiful and nourishing for myself and my family. And let’s be honest, the satisfied smiles around the breakfast table are worth every minute spent in the kitchen.

Beyond Breakfast: While this granola is perfect with yogurt and fruit for breakfast, its versatility extends far beyond the morning meal. It's a fantastic addition to your afternoon yogurt parfait, a delicious topping for ice cream, a crunchy element in homemade trail mix, or even a satisfying snack on its own. I often pack a small bag in my lunch to curb those mid-afternoon cravings for something sweet. The possibilities are truly endless.

Tips for Success: To ensure perfectly crunchy clusters, make sure your granola cools completely in the pan before transferring it to a storage container. This allows the granola to fully crisp up and prevents it from becoming soggy. Storing it in an airtight container at room temperature will keep it fresh for up to three weeks, making it a perfect make-ahead breakfast or snack option.

Making it Your Own: The beauty of homemade granola lies in its adaptability. Don't hesitate to experiment with different nuts, seeds, and dried fruits to create your own unique flavor combinations. Almonds, walnuts, pumpkin seeds, and chia seeds all make excellent additions. Dried mango, apricots, and goji berries add a delightful sweetness and texture. Feel free to get creative and tailor the recipe to your own taste preferences.

More than just Granola: This recipe isn't just about a delicious breakfast; it’s a reminder to slow down, to find joy in the simple things, and to connect with my family through shared meals. It's a testament to the power of homemade goodness and a comforting ritual in our busy lives. So, next time you’re looking for a simple yet rewarding baking project, give this Maple Pecan Granola a try. You won't be disappointed.
