Step-by-step

  • Turn the Instant Pot on using the “Sauté” button, and melt the ghee.
  • Add the onion and carrot with a big pinch of sea salt, stir to combine, and cook for 5-7 minutes so the veggies soften and sweeten.
  • Add the garlic and cook for one minute, and then add the wine to deglaze the pan.
  • Simmer the wine for a minute or 2 to burn off the alcohol.
  • Turn the Instant Pot “Off”.
  • Stir the chicken and nutritional yeast into the cooked onion/carrot/garlic mixture.
  • Pour the coconut milk in the pot, and then put the pasta in.
  • Make sure the pasta is submerged in the coconut milk.
  • Put the broccoli on top of the coconut milk/noodle mixture – do not mix the broccoli in, or the noodles will not stay under the coconut milk and won’t cook all the way through.
  • Put the lid on the Instant Pot, and be sure the valve is closed.
  • Press the “Manual” button and bring the time down to 2 minutes.
  • The Instant Pot will take a few minutes to come to pressure, and then it will count the 2 minutes down.
  • When the Instant Pot beeps after the 2 minute countdown, turn the Instant Pot off (do NOT release the pressure valve yet), and set a timer for 3-4 minutes.
  • 3 minutes will leave your noodles with an al dente bite, and 4 minutes will leave them softer.
  • After 3 minutes, release the valve for the rest of the pressure in the Instant Pot, and take the lid off.
  • Stir everything up – I like to let it sit for a few minutes to absorb some of the liquid – this will also allow the noodles to soak in more liquid.
  • Sea salt and pepper the alfredo to your taste and serve!

My Unexpected Instant Pot Alfredo Adventure: A Busy Mom's Guide to Weeknight Wonders

Life as a working mom is a whirlwind. Between early mornings, packed lunches, school drop-offs, demanding meetings, and the never-ending to-do list, finding time for a healthy and delicious home-cooked meal often feels impossible. Takeout is tempting, but the guilt and the nutritional void it leaves are even more so. That's where my Instant Pot becomes my culinary superhero.

I stumbled upon this Instant Pot Chicken and Broccoli Alfredo recipe quite by accident, while searching for a quick and easy weeknight dinner solution that wouldn’t sacrifice flavor or nutrition. Let me tell you, it's become a family favorite. The creamy, cheesy sauce (dairy-free, I might add!), the tender chicken, and the perfectly cooked broccoli and pasta...it's a symphony of flavors in a single pot! Gone are the days of slaving over a stovetop, meticulously timing the pasta, and worrying about the sauce separating. The Instant Pot simplifies the entire process, leaving me with more time to spend with my kids – a win-win in my book.

The beauty of this recipe lies not just in its speed and convenience, but also in its adaptability. I’ve experimented with different types of pasta, adding spinach or mushrooms for extra nutrients, and even swapping the chicken for shrimp or tofu, depending on our dietary needs and preferences. The flavor combinations are endless! It’s a blank canvas for culinary creativity, perfect for busy weeknights when inspiration may be running low.

One of the biggest surprises was how incredibly easy it was to make a dairy-free Alfredo sauce that actually tastes amazing. Using coconut milk and nutritional yeast creates a rich and creamy texture that rivals any traditional Alfredo sauce. My kids, who are notoriously picky eaters, devoured it without hesitation. Knowing I'm feeding them a healthy, delicious, and convenient meal is priceless.

The secret to success with this recipe lies in the layering. Don't mix the broccoli into the coconut milk and pasta; simply place it on top. This ensures even cooking and prevents the noodles from becoming mushy. The pressure-cooking method creates tender, perfectly cooked pasta every time – al dente if you follow the timing perfectly, or a little softer if you prefer.

This Instant Pot Chicken and Broccoli Alfredo recipe is more than just a meal; it’s a time-saver, a stress reliever, and a testament to the power of simple, healthy cooking. It’s a reminder that nourishing your family doesn't have to be complicated or time-consuming. With a little help from my trusty Instant Pot, I can create delicious and healthy meals that bring joy to my family and leaves me with more time for the things that truly matter.

So, if you're a busy mom (or dad!), a stressed-out professional, or anyone who appreciates a quick and easy meal that doesn't compromise on flavor or nutrition, give this recipe a try. You won't regret it! The simple act of sitting down to a delicious, homemade meal with loved ones is a precious moment, and this recipe helps make that happen even on the busiest of days.

It's also a great recipe to adapt for meal prepping. I often double the recipe and store the leftovers in the refrigerator for quick lunches or dinners throughout the week. The flavors actually meld together even more beautifully when reheated. The convenience alone makes it a game-changer for those busy days when every minute counts.

Beyond the practicality, this recipe allows for personalization. Do you have leftover roasted vegetables? Throw them in! Want to add some spice? A pinch of red pepper flakes can do wonders. The beauty of this recipe is its adaptability, a crucial feature for those of us who need flexibility in our meal planning. Don't be afraid to experiment and make it your own.

In the end, it’s about finding those little shortcuts and efficiencies in our lives, and for me, this Instant Pot Chicken and Broccoli Alfredo is one of them. It’s a simple, yet satisfying dish that proves that healthy, home-cooked meals don't have to be a burden. They can, in fact, be a source of comfort, joy, and efficiency in our busy lives.
