After much experimentation with ingredients and ratios, this is my favorite sweet pickle relish. I usually can it when the burpless cukes from the garden get away from me.

Step-by-step

  • To deseed cucumbers, I cut them in half lengthwise and scoop out the seeds with my finger.
  • I chop the unpeeled cucumbers as well as the other vegetables with a Pampered Chef chopper.
  • Put all the vegetables in a large bowl.
  • Sprinkle the salt over the chopped vegetables.
  • Cover with cold water and let stand for 2 hours.
  • Drain vegetables well, then press out as much liquid as possible.
  • In a large pot, combine sugar, vinegar and seeds.
  • Bring to a boil.
  • Add vegetables.
  • Bring back to a boil and simmer for 10 minutes.
  • Using a slotted spoon, put into pint jars according to standard canning procedures. (Note: Although some of the brine needs to go in the jars, I use a slotted spoon to keep it from being too soupy.)
  • Process in a hot water bath according to your altitude (10 minutes for up to 1000 ft.).

My Favorite Sweet Pickle Relish Recipe

As a busy homemaker, I'm always looking for ways to preserve the bounty of my garden and create delicious, homemade condiments. This sweet pickle relish recipe is a result of countless experiments, tweaking ingredients and ratios until I achieved the perfect balance of sweet and tangy flavor. It's become a staple in my pantry, a delicious addition to burgers, hot dogs, sandwiches, and even as a side dish with grilled meats.

The key to this recipe is using fresh, high-quality ingredients. I grow my own burpless cucumbers, but you can certainly use store-bought ones. The sweetness comes from a generous amount of sugar, perfectly balanced by the tartness of cider vinegar. The celery and mustard seeds add a wonderful depth of flavor and a pleasant bite. The vibrant colors of the red and green bell peppers add visual appeal as well as a subtle sweetness. The process of making this relish is surprisingly straightforward, though it does require some time and attention to detail, particularly during the canning process.

The most satisfying part of making this relish is the feeling of accomplishment. Knowing that I’ve created something delicious and preserved the flavors of summer for months to come is incredibly rewarding. It's a tradition I cherish, and it connects me to a simpler way of life. The joy of sharing jars of this sweet pickle relish with family and friends, seeing their faces light up as they taste it, is truly priceless. It's a taste of summer that lasts long after the garden has gone to sleep.

Canning is more than just preserving food; it’s a journey into the past, a connection to generations of homemakers who practiced this art before us. It's about resourcefulness, taking advantage of seasonal abundance, and sharing the fruits of your labor. It requires patience and meticulous attention to detail to ensure the safety and longevity of your creations. Learning the proper procedures is crucial; taking shortcuts can lead to spoilage or worse. I've spent years perfecting my canning techniques, learning from trial and error, and studying various resources to ensure that every jar I create is safe and delicious.
