Step-by-step

  • To speed the prep process I usually use my food processor to grate the veggies for this dish.
  • Grate the onions, carrots, zucchini & garlic, and add it to a large pot with some oil.
  • Cook the veggie mix down until it is soft and translucent.
  • Then add the lentils, stock, BBQ sauce & cinnamon quill.
  • At this point you can either transfer the mix in to a slow cooker and cook on low for 8 hours. OR bring to a boil and then reduce to a simmer, cooking until the lentils are soft.
  • You may need to add more stock or water if your mix gets too dry.
  • Meanwhile peel and dice your potatoes, cook them in boiling water until soft add the cream & butter plus a little salt and mash them with a stick mixer, blender or by hand.
  • Once creamy add the cheese and mix it in.
  • Once the lentils are soft remove the cinnamon quill, add some salt and pepper and your frozen peas and transfer the mixture to a baking dish.
  • Preheat your over to 180C (if your mix is still really hot just under the grill would be fine)
  • Spread the mash potato evenly over the top of the mix and bake until the mash browns a little and the lentils are bubbling.
