Crockpot Cube Steak and Gravy

Cube steak may be inexpensive, but it can also be quite tough. Prepared in the crockpot it is moist and falls apart easily when pulled with a fork. I love easy meals that my family loves. This dish can be tweaked to suit your family's taste.

Step-by-step

  • Place all ingredients in a crock pot.
  • Cook on low all day.
  • Serve over rice, noodles or mashed potatoes with your favorite side dishes.
  • Optional- Add some frozen or canned mushrooms during the last 15 min. of cooking.
  • Do not stir the meat during the cooking process.
  • Take the meat out carefully with a spatula when it is done then mix the sauce and spoon it over the meat.

Ingredient lists rarely explain how mechanical force alters tough cuts during extended heating cycles. Cube steak consists of top round or top sirloin passed through a mechanical tenderizer, creating a lattice of pierced muscle fibers. Applying moist heat over an eight-hour window breaks down collagen effectively, but handling the beef improperly leads to shredding before plating occurs.

  • Maintain a liquid-to-meat ratio that keeps the steaks submerged by at least two-thirds using water and canned soup combinations.
  • Refrain from agitating the slow cooker basket during the cooking cycle to prevent the tenderized protein fibers from breaking apart prematurely.
  • Extract the cooked steaks using a wide spatula rather than tongs to maintain structural integrity before whisking the surrounding pan juices.
  • Assess doneness visually by pressing a fork against the center of a cut; tender meat should yield instantly with zero rubbery resistance.

Proper resting allows the gelatinized pan sauce to thicken slightly off the heat source before spooning over starches. Store leftover portions in an airtight glass container for up to three days.
