Step-by-step

  • Set a pot of water to boil for the pasta while you cook the other ingredients.
  • Heat a large pan over medium heat. Add just enough oil to coat the bottom and cook the chicken about two minutes on each side, until no longer pink.
  • Remove the chicken to a heat-safe bowl or dish and place in the oven at 250F to keep warm.
  • Add a little more oil to the same pan, reduce the heat to medium-low, and add the onion and garlic.
  • Allow to saute for a minute or two. You can also add a splash of white wine if you have a lot of brown bits on the bottom of your pan.
  • Add the bag of frozen vegetables, stir to combine with the onion and garlic, and allow to cook over medium heat until the vegetables are cooked, but still crisp.
  • Add chicken pieces and season with red pepper, salt, and pepper.
  • Meanwhile, add the pasta to the boiling water and cook according to package instructions until al dente.
  • Drain well and remove to a large serving bowl.
  • Add the butter and allow it to melt, stirring to coat the pasta.
  • Add chicken and vegetable mixture and parmesan cheese, reserving a handful of the cheese for garnish.
  • Mix until well combined and top with remaining cheese.
  • Serve immediately. Note: This recipe makes four generous servings; it can easily be stretched to serve six with the inclusion of bread and/or a salad.

Easy Pasta Primavera with Chicken: A Weeknight Winner

As a busy working mom, finding time to cook a delicious and healthy meal can feel like a Herculean task. Between school pick-ups, after-school activities, and the never-ending to-do list, the last thing I want to do is spend hours in the kitchen. That’s why I’ve become a huge fan of quick and easy recipes that don't compromise on flavor or nutrition. This Easy Pasta Primavera with Chicken is my go-to weeknight meal, and it consistently gets rave reviews from my family. It’s surprisingly elegant, tastes far more complicated than it is, and comes together in under 30 minutes – perfect for a busy schedule.

The beauty of this dish lies in its simplicity. Fresh, vibrant vegetables are the stars, perfectly complementing the tender chicken and creamy pasta. I love using a frozen vegetable mix for convenience – it saves valuable time and still delivers a beautiful array of colors and textures. Feel free to experiment with different vegetable combinations depending on what's in season or what your family prefers. Broccoli, carrots, peas, and bell peppers are all excellent additions. The secret to its "fancy" taste lies in the careful balance of flavors: a touch of garlic, a hint of red pepper flakes for a subtle kick, and the generous sprinkling of Parmesan cheese at the end.

This recipe isn’t just about speed; it’s about flexibility too. If you have a little extra time, you can roast the chicken breasts for a deeper flavor. Or, for a lighter meal, substitute the chicken with grilled shrimp or tofu. The pasta itself offers endless possibilities. While I prefer rotini for its ability to hold the sauce well, any small pasta shape would work beautifully. And don't underestimate the power of a simple side salad to complete this meal. A fresh green salad with a light vinaigrette adds a refreshing contrast to the richness of the pasta dish.

This recipe is a lifesaver for those nights when you want a comforting yet sophisticated meal without the fuss. The ease of preparation, the delicious flavors, and the versatility of ingredients make it a true weeknight winner. It's become a staple in my home, and I know it will quickly become a favorite in yours too. So ditch the takeout menus and give this recipe a try – I promise you won't be disappointed!

Tips and variations:

  • Spice it up: Add a pinch of Italian seasoning or oregano for an extra layer of flavor.
  • Creamier sauce: Stir in a splash of heavy cream or crème fraîche for a richer, creamier sauce.
  • Lemon zest: A touch of lemon zest adds brightness and acidity to the dish.
  • Add protein: Incorporate other proteins, such as sausage, shrimp, or chickpeas.
  • Make it vegetarian: Omit the chicken and add more vegetables or a vegetarian protein source like lentils or tofu.
  • Customize your vegetables: Use any frozen or fresh vegetable mix you prefer.

This recipe is more than just a meal; it's a testament to the power of simple, wholesome ingredients coming together to create something truly special. Enjoy!
