Step-by-step

  • Preheat oven to 325 convection or 350 regular bake.
  • Take butter out of refrigerator and microwave for about 15 seconds.
  • Place butter, shortening or oil, cold sour cream and lime zest in a mixing bowl.
  • Mix for about one minute.
  • Add sugar and almond or vanilla flavoring, mix until smooth.
  • Add all dry ingredients at once.
  • Mix just until flour disappears and the mixture comes together in a ball of dough, about 1-2 minutes on very low speed.
  • Spray the cookie scoop with a little cooking spray.
  • Scoop the dough onto a cookie sheet. (Use a 1 ½ inch or a 2 inch scoop. A two inch scoop will produce a cookie similar in size to the Swig cookie.)
  • If you don't have a cookie scoop, roll the dough into a ball about the size of a golf ball.
  • Place about ½ cup sugar into a small bowl.
  • Flatten the cookies with the bottom of a glass dipped in sugar (press the bottom of the glass against the cookie first, then dip it in the sugar so the sugar will stick).
  • Press the cookies so they are flattened a bit, twisting the glass as you press to produce a jagged edge.
  • Bake in oven for about 10-12 minutes or until edges are lightly golden and cookies are slightly firm to the touch.
  • Remove from oven, let cool.
  • Place the cookies in the fridge and chill.
  • Prepare the frosting: Beat together the butter, sour cream, powdered sugar, lemon juice, zest and salt.
  • When all ingredients are incorporated, add the drop of food coloring and milk if the frosting needs to be thinned.
  • Frost after the cookies are completely chilled.
Makes about 18 large cookies.

My Lemon Lime Sprig Cookie Adventure: A Baking Journey

Baking has always been more than just a hobby for me; it's a form of self-expression, a way to connect with my family, and a delicious escape from the everyday grind. Whether it's the rhythmic mixing of ingredients, the comforting aroma filling my kitchen, or the joy of sharing the finished product, the whole process is incredibly therapeutic. And lately, I've been completely captivated by the vibrant zest and refreshing tang of lemon and lime. This led me on a baking adventure that culminated in these utterly delightful Lemon Lime Sprig Cookies.

The initial inspiration struck me while browsing a collection of vintage cookbooks. There was something about the simplicity of the ingredients, combined with the promise of a bright, citrusy flavor, that immediately caught my attention. I envisioned a cookie that would be both visually appealing and incredibly tasty – something that could brighten up any afternoon tea or satisfy a sweet craving after a long day. The recipe I adapted promised just that, and I was eager to put my own spin on it.

The journey wasn't without its challenges. My first attempt resulted in cookies that were slightly too dense, a common problem when baking with sour cream. I tweaked the recipe, reducing the amount of flour slightly, and adjusting the baking time. The result? Perfectly soft, yet subtly crisp cookies with a delightful balance of sweetness and tartness. The citrus zest added a fragrant brightness that is simply unforgettable.

The frosting was the final flourish. A simple lemon buttercream, infused with a hint of lime zest, provided the perfect complement to the cookies' citrusy base. The creamy texture against the slightly crisp edges created a sensational contrast in texture and flavor. The process of carefully frosting each cookie, paying attention to detail, was almost meditative. It's amazing how a small act of careful attention can transform a simple cookie into a true work of art.

Beyond the taste and visual appeal, these Lemon Lime Sprig Cookies represent so much more. They represent the joy of creation, the satisfaction of overcoming a baking challenge, and the pleasure of sharing something delicious with loved ones. They're a testament to the power of simple ingredients to create something truly extraordinary. The memories made while baking these cookies, the laughter shared while decorating them, and the smiles on the faces of those who taste them are the true rewards of this baking journey. And if you're looking for a recipe that embodies sunshine and happiness, look no further.

So, grab your aprons, gather your ingredients, and prepare to embark on your own Lemon Lime Sprig Cookie adventure. Trust me, it's a journey worth taking. The bright citrus flavors, the satisfying texture, and the simple elegance of these cookies will make them a cherished addition to your baking repertoire, a recipe you'll want to revisit again and again.

Don't be afraid to experiment! Try adding different extracts, such as orange or vanilla, to modify the flavor profile. Or, get creative with the frosting by adding different colored sprinkles, or using a different type of icing altogether. The possibilities are endless! Most importantly, have fun, enjoy the process, and savor the delicious results. Happy baking!
