Step-by-step

  • Preheat oven to 350 degrees. Line the bottom of an 8 inch cake pan with parchment paper and grease the sides.
  • Whisk together flour, sugar and baking powder in a large mixing bowl.
  • Add butter, egg whites, vanilla, sour cream and milk and mix on medium speed just until smooth. Do not over mix.
  • Spread batter evenly into cake pan.
  • Bake 18-20 minutes, or until a toothpick inserted comes out with a few crumbs.
  • Allow to cool for 3-4 minutes, then remove to cooling rack to finish cooling.
  • Once cake has cooled, remove dome from cake with a large serrated knife. Poke holes in the top of the cake with something like the end of a wooden spoon, or a straw.
  • Combine hot water and orange JELLO in a small bowl, then spoon mixture over the cake and spread it so that it goes into the holes.
  • To make the ice cream layers, beat the cream cheese and sugar in a mixer bowl until smooth.
  • Add milk and mix until smooth.
  • Fold in Cool Whip.
  • Divide mixture evenly between two bowls.
  • Combine hot water and remainder of orange JELLO powder in a small bowl. Fold into one of the bowls with half of the ice cream mixture.
  • Add vanilla extract to the other half of the ice cream mixture.
  • Line the sides of an 8-inch springform pan with parchment paper. The parchment paper should stick up above the top edge of the pan, since the cake will probably be a little taller than your pan. If you want, put a cardboard cake circle in the bottom of the pan. If not using a springform pan, you pan put some plastic wrap in the bottom of the pan and up the sides and use it to lift the cake out of the pan when it’s done.
  • Put the cake layer into the bottom of your pan.
  • Top the cake with the vanilla ice cream and spread into an even layer.
  • Add the orange ice cream and spread into an even layer.
  • Allow ice cream cake to freeze completely, 6-8 hours.
  • When frozen, remove from springform pan and remove parchment paper from sides.
  • To finish off the cake, ice the outside with additional Cool Whip. You can use gel icing color to make it orange, if you prefer. Pipe additional Cool Whip around the top edges and top with orange candy slices.
  • Freeze until ready to serve.

It's a surprisingly simple recipe that delivers maximum wow-factor with minimal effort.

The beauty of this cake lies in its ingenious blend of homemade cake and creamy, vibrant ice cream layers. Forget those complicated frosting techniques and hours of chilling. This recipe simplifies the process, allowing even a time-strapped individual like myself to create a dessert that tastes like a summer afternoon. The bright citrus notes of the orange Jell-O perfectly complement the rich vanilla ice cream, striking a balance that satisfies both sweet and tart cravings. It’s a delightful combination, offering a refreshing counterpoint to the rich, buttery cake. The entire creation is a feast for the eyes, its sunny orange hues adding a delightful pop of color to any gathering.

I’ve perfected this recipe over time, learning to streamline the process and make it my own. The use of a springform pan is crucial, making the removal of the frozen cake a breeze. The homemade cake is light and moist, not overly sweet, which is a testament to the right balance of ingredients. The orange Jell-O infusion adds a lovely zing without overpowering the delicate vanilla notes of the ice cream.

What’s most rewarding about this recipe is the sheer joy it brings to my family. The smiles on their faces when I unveil this icy treat are priceless. It's more than just a dessert; it's a symbol of creating something special from simple ingredients, a moment of shared happiness in the midst of a busy life. This cake isn’t just about the taste; it’s about the memories, the laughter, and the feeling of warmth that comes from sharing something homemade with the ones you love. Tips and Tricks for Success:

  • Use good quality ingredients: The better the ingredients, the better the taste. A good quality vanilla extract really makes a difference.
  • Don’t overmix the cake batter: Overmixing can lead to a tough cake. Mix until just combined.
  • Let the cake cool completely: This prevents the ice cream from melting too quickly.
  • Freeze thoroughly: Allow ample time for the cake to freeze solid for easy slicing.
  • Get creative with the garnish: Feel free to experiment with different toppings like chocolate shavings, fresh berries, or even a dusting of powdered sugar.

This Orange Creamsicle Ice Cream Cake is a testament to the fact that even amidst a busy schedule, creating moments of joy and deliciousness is entirely possible.
