Step-by-step

  • Preheat oven to 325 degrees.
  • Put syrup in 4-quart saucepan and bring to a boil. (Use a large saucepan, syrup will bubble up quite high.)
  • Lower heat to simmer and cook until reduced by about two thirds, 15 to 20 minutes. (Syrup is ready when a few drops on a chilled plate are very sticky when rubbed with your fingers.)
  • Remove from heat and whisk in cream and milk.
  • Return saucepan to heat and bring to low simmer.
  • Meanwhile whisk yolks well with sugar and salt in large bowl.
  • Remove maple cream from heat and let it cool for 5 minutes, then very slowly whisk it into the yolks.
  • Strain through a chinois or fine-meshed sieve to remove any lumps of yolk.
  • Arrange 8 4-ounce ramekins or custard cups in a flat-bottomed roasting pan large enough to accommodate them with 3/4 inch of space in between the cups.
  • Evenly divide the custard among the cups; do not fill to the top.
  • Carefully add enough hot tap water to roasting pan to come a third of the way up sides of cups.
  • Cover roasting pan with foil, tenting it slightly so that foil does not touch top of custards.
  • Put pan on middle rack of oven and bake for 35 minutes; rotate pan, then bake another 15 minutes and check for doneness.
  • The custards are done when the centers are set a bit, even jiggly like gelatin. Total baking time will be 50 to 60 minutes.
  • Remove pan from oven, remove foil, and let custards cool in water bath until you can safely pick them up, then let them cool to room temperature.
  • Refrigerate at least 4 hours, until thoroughly chilled.

My Simple Maple Crema Adventure

As a busy working mom, finding time to create delicious and comforting desserts can often feel like a Herculean task. Between school pick-ups, work deadlines, and the never-ending cycle of household chores, the kitchen sometimes feels like a luxury I can barely afford. However, there's something deeply satisfying about creating something beautiful and delicious from scratch, a small act of self-care that reminds me to slow down and appreciate the simple things in life. This Maple Crema recipe is a testament to that.

I stumbled upon this recipe while scrolling through a food blog – a calming escape during a particularly hectic week. The description of pure, natural flavors immediately resonated with me. I'm a firm believer in using high-quality ingredients; after all, it's the foundation of any great dish. So, armed with my trusty farmers' market haul – rich, creamy heavy cream and the freshest eggs I could find – I embarked on my culinary journey. The anticipation was almost as sweet as the final product!

What surprised me most was the simplicity of the process. It's not your typical complicated dessert that requires hours of meticulous work and a degree in pastry arts. The gentle simmering of the maple syrup, the careful whisking of the egg yolks, the precise baking – these small actions felt almost meditative. It was a chance to disconnect from the daily grind and focus on the rhythmic movements, the subtle transformations of ingredients from raw simplicity to decadent delight.

The scent of the baking crema filled the kitchen, a warm, comforting aroma that promised a sweet reward at the end of the day. Each step brought me closer to the moment I could finally taste the final product. The anticipation was almost unbearable. As the custards gently baked in the water bath, a sense of calm washed over me. It was a reminder that even amidst the chaos of life, there’s always time for a little bit of sweetness.

The end result was nothing short of magical. The creamy texture, the rich maple flavor – it was a perfect balance of sweetness and indulgence. Each spoonful was a tiny escape, a moment of pure bliss. This wasn’t just a dessert; it was a testament to the power of slowing down, embracing simplicity, and finding joy in the culinary arts. The beautiful amber hue of the finished crema, nestled in its ramekins, was a feast for the eyes as well as the palate.

Serving the Maple Crema to my family was another highlight. Watching their eyes light up as they tasted the creamy, maple-infused delight brought me immense joy. It was a shared experience, a moment of connection over something delicious and homemade. In a world where convenience often dictates our choices, creating this dessert felt like a rebellion – a conscious decision to prioritize quality, simplicity, and the rewarding act of creating something special from scratch. This isn't just a recipe; it’s a small act of love, a sweet reminder that even amidst the chaos of life, simple pleasures are within reach.

Beyond its deliciousness, this recipe has become a symbol of self-care for me. It's a reminder to prioritize moments of peace and tranquility amidst the daily grind. The rhythmic whisking, the comforting aroma of baking – these are the small acts that nourish not just the body but also the soul. And that, I believe, is the true sweetness of this Maple Crema.

So, if you’re looking for a delicious and surprisingly simple dessert that will brighten your day and bring a touch of homemade warmth to your life, I highly recommend giving this Maple Crema a try. It's a recipe that goes beyond mere ingredients and instructions; it's an invitation to slow down, savor the process, and rediscover the simple pleasures of cooking and sharing a delightful treat with loved ones. The experience, in the end, is as rewarding as the delectable final product itself.
