Sous Vide Lamb Chops with Garlic Herbed Butter

This is hands down one of the tastiest dishes I've made so far via sous vide, and to top it off, it's crazy simple. The sous vide cook time is a mere 2 hours for the lamb chops plus any additional time for your side dishes or other accompaniments. Personally, I love lamb chops served with roasted vegetables.

Step-by-step

  • Heat the sous vide bath to 136F for medium rare or 140F for medium.
  • Season the lamb chops with salt, pepper, and rosemary.
  • Vacuum seal the lamb chops.
  • Drop the vacuum-sealed lamb chops into the sous vide bath for 2 hours. You can cook up to 4 hours with any change to the texture.
  • When the time on the lamb has almost elapsed, start heating up a cast iron pan on medium-high heat.
  • Once the 2 hours have elapsed, open the bag and pat each of the lamb chops with a paper towel to remove all the excess moisture. This will ensure you get a good sear. Don't worry if you remove the rosemary, it's basically done its job already.
  • Melt the butter in a small dish in the microwave until melted. Make sure you don't burn it.
  • Add the minced garlic and onion powder to the butter and stir until well combined.
  • Baste each lamb chop with a thin coat of the herbed butter mixture.
  • Fry each lamb chop until golden brown, about 20 seconds each side. Make sure you don't sear them too long, otherwise you'll undo all your hard sous vide work.
  • Serve with roasted vegetables and/or a side of your choice, like rosemary roasted potatoes.

My Unexpected Culinary Adventure: Mastering Sous Vide Lamb Chops

As a busy working mom, time is my most precious commodity. Dinner often feels like a race against the clock, a frantic dash between school pick-ups, homework battles, and the ever-present mountain of laundry. So, when I discovered sous vide cooking, it was a revelation – a culinary game-changer that promised delicious, restaurant-quality meals without the endless hours in the kitchen. My initial foray into the world of sous vide was tentative, fueled by a desire for simplicity and a yearning for flavorful, satisfying meals that wouldn't require a culinary degree to prepare.

I started small, experimenting with simpler dishes, before finally tackling the intimidating – yet incredibly rewarding – challenge of sous vide lamb chops. I’d always loved lamb, but the thought of overcooking it and ending up with tough, dry meat was enough to keep me away. Sous vide, however, promised to eliminate that fear. The precise temperature control of the water bath meant perfectly cooked lamb, every single time. The result was nothing short of transformative. The lamb chops were succulent, juicy, and bursting with flavor – a far cry from the dry, disappointing versions I’d occasionally encountered in restaurants. The herbed garlic butter added a rich, savory depth, complementing the lamb’s inherent deliciousness.

The Ease and Elegance of Sous Vide

What truly amazed me was the simplicity of the process. Seasoning the lamb chops, vacuum-sealing them, and submerging them in the water bath was remarkably easy. While the lamb cooked gently in the water bath, I could focus on preparing the sides – in my case, a simple roasted vegetable medley – allowing me to create a complete and satisfying meal without the usual kitchen chaos. The final sear in the cast iron pan added a beautiful golden-brown crust, enhancing the overall presentation and delivering a delightful textural contrast to the tender interior of the lamb.
