Step-by-step

  • Place chicken cutlets on a cutting board. Cover with parchment paper and, using a meat mallet or a rolling pin, pound the chicken until its about 1/4 inch thin.
  • Discard the parchment paper. Cut the chicken cutlets down the center so that they are now two, thinly sliced separate pieces of chicken. You can keep them connected if you prefer, It won't make a difference.
  • Season the chicken on both sides with kosher salt and black pepper, to taste.
  • Place 1/4 cup arrowroot on a plate or wide bowl. Dredge the chicken cutlets so that they are just lightly coated on all sides. You don't have to use all of the arrowroot-- you just want the chicken lightly coated. Set aside on a plate.
  • Heat a large skillet over medium-high heat. Add 2 tbsp. olive oil and swirl the pan so the bottom is coated in the oil.
  • Sear the chicken (you may need to do this in batches depending on the size of your skillet), until lightly golden brown on both sides, about 3-4 minutes a side.
  • After both sides are browned remove from skillet and set aside on a plate. (it doesn't necessarily have to be completely cooked through yet, it will continue to cook in the sauce later).
  • If you are working in batches, you will likely need to add more olive oil in between to ensure the skillet isn't too dry.
  • When all of your chicken is browned, reduce heat to medium. Add ghee and let melt, then add the shallots, garlic, and sliced mushrooms.
  • Season with salt and pepper, and crushed red pepper flakes (if using).
  • Saute until mushrooms are tender, about 5 minutes.
  • Add the chicken broth, coconut milk, vinegar, and the juice of the lemon.
  • Stir to combine and the reduce heat so that the sauce is just simmering.
  • Nestle the chicken back into the sauce and let simmer for 8-10 minutes, or until the sauce thickens and the chicken is completely cooked through.
  • If your sauce is too thick, add 1/4 cup of chicken broth more to thin it out to desired consistency.
  • Top with parsley and serve!
  • Serve with zucchini noodles to keep it whole30 approved, or try serving with brown rice gluten free pasta for a healthier pasta dish.

My Whole30 Chicken Marsala Adventure: A Weeknight Winner

As a busy working mom, finding time to cook healthy, delicious meals can feel like a Herculean task. Between early morning meetings and late-night homework sessions, the last thing I want is to spend hours in the kitchen. That’s why I’m always on the lookout for quick, easy, and – most importantly – tasty recipes that fit into my Whole30 lifestyle. This Whole30 Chicken Marsala recipe has become a true lifesaver, a delicious and satisfying dinner that comes together in under 30 minutes. It’s elegant enough for a date night but simple enough for a weeknight family dinner. The best part? My kids actually love it!

The initial draw to this recipe was its simplicity. I'm not a professional chef by any stretch of the imagination; my culinary skills are honed through years of trial and error, fueled by a desire to feed my family nutritious meals without sacrificing flavor. I've experimented with various Whole30-compliant adaptations of classic dishes, and this Chicken Marsala is one that consistently delivers. The tender chicken, perfectly seared to a golden brown, is enveloped in a rich, savory sauce that’s both comforting and sophisticated. It’s the kind of dish that makes you feel good about what you're eating – a feeling that’s incredibly important to me, especially when I'm juggling multiple responsibilities.

What sets this recipe apart is the balance of flavors. The earthy mushrooms, pungent garlic, and tangy lemon juice create a symphony of tastes that perfectly complements the delicate chicken. The arrowroot starch thickens the sauce beautifully, creating a luxurious consistency that clings to the chicken with every bite. I find myself making this dish at least once a week, sometimes twice, and each time it’s just as satisfying. I’ve even started experimenting with different variations, adding a touch of fresh thyme or swapping the mushrooms for other seasonal vegetables. The beauty of this recipe is its adaptability; feel free to make it your own!

Beyond the ease and deliciousness, this recipe aligns perfectly with my commitment to healthy eating. Whole30 is more than just a diet for me; it’s a lifestyle choice that helps me feel my best. By focusing on whole, unprocessed foods, I've noticed a significant improvement in my energy levels, digestion, and overall well-being. This Chicken Marsala recipe perfectly embodies those principles, allowing me to enjoy a satisfying and flavorful meal without compromising my health goals. It’s become a staple in my weeknight rotation, a testament to the fact that healthy eating doesn't have to be boring or time-consuming.

One of the things I love most about this recipe is the versatility. Serve it over zucchini noodles for a low-carb option, or pair it with brown rice or gluten-free pasta for a more substantial meal. It's equally delicious served hot off the stove or as leftovers the next day. The leftovers, in fact, often taste even better, the flavors having had time to meld and deepen. It's a recipe that's just as satisfying on a busy weeknight as it is on a relaxed weekend.

So, if you're looking for a quick, healthy, and undeniably delicious meal that fits into your Whole30 lifestyle (or any healthy eating plan, really), give this Chicken Marsala a try. You won't be disappointed. It’s the perfect combination of ease, flavor, and nutrition – exactly what I need (and what I’m sure many busy women need) in my kitchen.

Beyond the practical aspects, this recipe has also become a source of small joys in my otherwise hectic life. The simple act of preparing a healthy and delicious meal for my family, the satisfaction of creating something nourishing and flavorful from scratch, and the shared mealtime moments with my loved ones are all things I cherish. This Chicken Marsala is more than just a recipe; it's a small piece of self-care, a moment of peace and connection amidst the whirlwind of daily life.

I encourage you to experiment with different variations. Try adding different herbs, spices, or vegetables. Perhaps swap the coconut milk for another type of cream. The possibilities are endless! So grab your ingredients, put on some music, and get ready to create a delicious and satisfying meal that nourishes both your body and soul.

The final, and perhaps most important, aspect of this recipe is the sense of accomplishment it brings. In a world that often feels overwhelming, the ability to prepare a healthy and delicious meal for myself and my family provides a profound sense of satisfaction. It's a reminder that even in the midst of a busy life, I can still prioritize my well-being and create something beautiful and nourishing.
