Step-by-step

  • Place the flour in a shallow dish and season with the salt, pepper, garlic powder, oregano and thyme. Set aside.
  • Slice your mushrooms and chop the onions.
  • Heat your large skillet over medium-high heat. Add in the 1 tsp butter, allow to melt. Add in the mushrooms and onion, saute until onions are translucent and mushrooms are cooked. Remove the mushrooms and onions from the pan. Set aside.
  • Next, bread the chicken. Place the raw chicken breasts in the flour and coat, shaking off the access.
  • Add the 1 Tbsp of oil to your skillet. Then place in the coated chicken breasts. Cook each chicken breast for about 6 minutes on each side, depending on the thickness. Until they are almost golden brown. They may not be fully cooked yet, and that's ok. Remove them from the pan.
  • Next, add in the marsala and chicken stock and bring to a simmer. Add back the chicken breasts and the mushrooms and onions, allowing it all to cook together until the chicken is fully cooked and the sauce has thickened, about 10 minutes.
  • Serve each chicken breast with some chopped fresh parsley (if desired)

A Weeknight Winner: My Healthy Chicken Marsala

As a busy working mom, I'm always on the hunt for quick, healthy, and delicious weeknight dinners. My family can be picky, but this Healthy Chicken Marsala recipe is a guaranteed crowd-pleaser. It’s elegant enough for a special occasion, yet simple enough for a Tuesday night. The rich, savory sauce is utterly irresistible, and the chicken is perfectly tender. Forget takeout; this dish takes less time than ordering pizza and offers far more satisfaction (and nutrients!).

What I love most about this recipe is its versatility. You can easily adjust the ingredients to suit your taste and dietary needs. For instance, I often swap out the regular flour for gluten-free, making it a perfect option for those with dietary restrictions. Feel free to experiment with different herbs and spices, too. A dash of red pepper flakes can add a delightful kick, while fresh thyme elevates the earthy notes of the dish. The beauty of cooking is the freedom to personalize, and this recipe encourages just that.

The key to a truly successful Chicken Marsala lies in the balance of flavors. The sweetness of the Marsala wine complements the savory mushrooms and chicken beautifully. The subtle garlic and oregano provide an aromatic undertone that elevates the entire dish. And don't underestimate the importance of letting the sauce simmer for that extra 10 minutes; this allows the flavors to meld together perfectly, creating a rich, cohesive sauce that coats the chicken flawlessly.

This isn’t just a dinner; it’s an experience. The aroma alone fills the kitchen with warmth and promise. Watching the chicken sizzle in the pan, the mushrooms releasing their fragrant steam, and the sauce thickening to a perfect consistency, is a truly satisfying culinary journey. And the best part? Knowing that you've created a wholesome, delicious meal from scratch, packed with flavor and nutrients.

Beyond the ease and taste, making this dish feels empowering. It’s a testament to my ability to create something special, even amidst the chaos of daily life. It’s a small act of self-care, a moment of mindful creation in a world that often feels overwhelming. And when my family gathers around the table, savoring each bite of this flavorful chicken, it’s a reminder that the simplest moments are often the most rewarding.

Serving Suggestions:

While this dish stands beautifully on its own, consider serving it with a side of simple roasted vegetables (broccoli, asparagus, or carrots work beautifully) for a complete and balanced meal. A light salad with a vinaigrette dressing adds a refreshing contrast to the richness of the chicken and sauce. And for a truly elegant touch, serve it with a side of creamy polenta or mashed potatoes.

Leftovers? Absolutely! The flavors of this Chicken Marsala only get better the next day. It's a fantastic lunch option or a quick and easy dinner for a busy weeknight. Simply reheat gently in a pan or microwave until warmed through.

So, next time you’re looking for a delicious and healthy weeknight dinner, give my Healthy Chicken Marsala recipe a try. It’s a recipe that will become a staple in your home, just as it has in mine. It's more than just a meal; it’s a celebration of simple ingredients, wholesome flavors, and the joy of creating something delicious and nourishing for your loved ones.
