Step-by-step

  • Preheat oven to 350 degrees.
  • Lightly grease or spray with cooking spray a 9-inch x 13-inch glass baking pan and line it with parchment paper, so the paper hangs over the sides a little. Set pan aside.
  • In a separate bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt and set aside.
  • Using a mixer, in a large bowl, mix together the softened butter, white sugar, and brown sugar for 1 1/2 to 2 minutes.
  • Add in the eggs and vanilla and continue mixing until well incorporated and smooth.
  • Add in the dry mixture into the butter / sugar mixture. Beat to incorporate, just until all the ingredients come together.
  • Gather the dough into a ball and divide dough into 2 balls.
  • Take one of the balls and spread out into the prepared pan by smooshing it down so that it covers the bottom of the pan completely in an even layer.
  • Cover the dough with a single layer of the chocolate bars. 3 fits nicely.
  • Next, add the marshmallow fluff to the top of the chocolate bars and spread out to sides of pan.
  • Lightly flour a board or counter top and smoosh or roll with a rolling pin, the other half of the s'mores cookie dough and make it/roll it the size of the your pan. I do it by placing the pan on top to get an idea about the size to get an idea.
  • Slice the dough into strips and lay each piece on top of the fluff until you've covered it all as good as you can. Try to cover up all the marshmallow as good as you can, but it's ok to have some marshmallow poking out.
  • Place pan into your preheated oven and bake for about 30-35 minutes, until the top is golden brown.
  • After baked, transfer to cool completely on a rack.
  • When cool, slice and serve.

My S'mores Bar Obsession: A Sweet Confession

Okay, let's be honest. I have a problem. It's not a *serious* problem, mind you, but it's definitely a problem I'm not particularly eager to solve. My problem? S'mores bars. Specifically, these outrageously delicious OMG S'mores Bars I recently perfected. They're the reason I've sworn off diets, cancelled my gym membership (temporarily, of course!), and invested heavily in extra-large pants.

It all started innocently enough. A friend brought some to a potluck, and they were gone in minutes. I wasn't just satisfied; I was obsessed. The perfect blend of gooey marshmallow, rich chocolate, and crunchy graham cracker base ignited a craving that refused to be ignored. I spent the next week on a quest, scouring the internet for recipes, tweaking measurements, and generally making a monumental mess in my kitchen. But the results? Absolutely worth it.

The Secret to Ultimate S'mores Bar Bliss

Now, I've tried my fair share of s'mores bars, from store-bought to homemade, and let me tell you, there's a significant difference. The key, in my opinion, is the balance. You want that perfect ratio of crunchy, chewy, and gooey. Too much graham cracker, and it's dry. Too much marshmallow, and it's overwhelmingly sweet. Too little chocolate, and what's even the point?

My recipe achieves that perfect balance. The graham cracker crust is just the right amount of crisp; it provides a satisfying foundation for the layers to come. Then comes the rich, melting chocolate—the luxurious heart of this decadent treat. Finally, the marshmallow fluff – airy, billowy, and utterly irresistible. It’s the perfect textural and flavor experience.

Beyond the Recipe: A S'mores Bar Journey

These s'mores bars aren't just a recipe; they’re a journey. A journey filled with the warm aroma of baking, the sweet satisfaction of a perfectly golden crust, and the pure joy of sharing a treat with loved ones. I've made them for countless occasions – backyard barbecues, summer picnics, birthday parties, even just a quiet night in front of the TV. They're a crowd-pleaser, guaranteed to bring smiles to even the grumpiest faces.

The making of these bars is an experience in itself. The simple act of pressing the graham cracker crust into the pan, carefully layering the chocolate and marshmallow, and finally, watching the golden-brown perfection emerge from the oven – it’s therapeutic, grounding, and undeniably rewarding. It’s a way to disconnect from the stresses of daily life and reconnect with the simple pleasures of baking.

More Than Just a Snack

However, these s'mores bars transcend mere snackdom; they’re a symbol of sweet memories and shared experiences. I've watched friends and family gather around, eyes wide with anticipation as the first slice is served, each bite followed by satisfied sighs and murmured compliments. These bars have become a small, sweet ritual, a shared experience that binds us together. They represent joy, warmth, and connection; and in a world that often feels frantic and disconnected, those things are invaluable.

So, if you’re looking for a recipe that will transport you to a simpler time, one filled with sunshine, laughter, and deliciously sweet moments, look no further. These OMG S'mores Bars are more than just a treat; they're an experience.

A Final Word of Warning: These bars are incredibly addictive. Prepare yourself for an insatiable craving, a sudden urge to bake another batch (and another, and another...), and a potential increase in your pant size. But trust me, it's a risk worth taking.
