Step-by-step

  • In a medium saucepan, heat half the oil and add half of the chopped onion. Sauté the onion until it begins softening and turning translucent.
  • Add in the brown lentils and cook for one minute.
  • Add in the cooked rice and seasoning to taste, cooking for 5 minutes.
  • Set this mixture aside.
  • In a large saucepan, bring water to the boil and boil the cabbage leaves for 1-2 minutes each. Remove from water and set aside.
  • In the same large saucepan (without the water), add the remainder of the oil and onion and sauté for 2 minutes.
  • Add in the canned tomatoes and tomato paste, cooking for 5 minutes on a gentle simmer.
  • Add in ½ cup of water and season to taste.
  • While the sauce is cooking, lay out the cabbage leaves, overlapping smaller leaves to form one larger leaf if necessary. Place a portion of the mixture in the center of each.
  • Fold the bottom half of the cabbage over the filling, then fold in the sides and roll up tightly.
  • Transfer cabbage rolls, seam side down, onto a plate.
  • Once you have finished rolling the cabbage rolls and the sauce has been cooking for 10 minutes, place all the cabbage rolls in the sauce and cook for another 10 minutes.
  • Serve warm on its own, with mashed potato or bread.

My Unexpected Culinary Adventure: Vegan Cabbage Rolls

As a busy businesswoman, my life revolves around deadlines, meetings, and the constant hum of activity. Finding time for anything beyond the bare necessities often feels like a luxury. Cooking, for me, used to be a chore, a necessary evil to fuel my demanding schedule. Quick, convenient meals were the norm – takeout, pre-packaged salads, anything that minimized time spent in the kitchen. But recently, I've discovered a new passion, a quiet joy nestled amongst the chaos: cooking healthy, delicious vegan meals. It all started with a seemingly simple recipe: vegan cabbage rolls.

The idea initially felt daunting. Cabbage rolls? The very name conjured up images of elaborate preparations and hours spent in the kitchen, a stark contrast to my fast-paced lifestyle. However, the promise of a hearty, comforting meal, packed with wholesome ingredients and free from animal products, piqued my interest. I dove into the recipe, initially hesitant but quickly drawn in by the simple yet satisfying steps. The process, surprisingly, was therapeutic. The rhythmic chopping of onions, the satisfying sizzle of vegetables in the pan, the gentle simmer of the tomato sauce – it was a calming counterpoint to the often frenetic energy of my work life.

The Transformation of Taste

What surprised me most wasn’t just the ease of preparation, but the explosion of flavor. The combination of tender cabbage leaves, savory lentil filling, and rich tomato sauce created a symphony of taste that completely exceeded my expectations. The vegan version was remarkably satisfying, rich and filling, proving that vegan cooking doesn't have to mean sacrificing flavor or indulgence.
