  • Preparing Time: 15 minutes
  • Total Time: 30 minutes
  • Served Person: 6

Step-by-step

  • Fill a large pot with 3 quarts of water and add the Old Bay seasoning and 1 tablespoon of salt. Bring to a boil, add the shrimp, lower the heat, and simmer for 3 minutes, until just firm. With a skimmer or slotted spoon, transfer the shrimp to a large bowl. Leave 2 cups of the poaching liquid in the pot and discard the rest.
  • Add the wine to the poaching liquid and bring to a boil. Add the scallops, lower the heat, and simmer for 2 minutes, until just cooked. With the skimmer, transfer the scallops to the bowl with the shrimp.
  • Bring the poaching liquid back to a boil, add the calamari, and simmer for 2 to 3 minutes, until just cooked. Be careful not to overcook any of the seafood or it will be tough! With the skimmer, transfer the calamari to the bowl.
  • Bring the poaching liquid to a boil again, add the mussels, cover, and simmer for 4 to 5 minutes, until all the shells have opened, discarding any that don't open. Turn off the heat and set aside until the mussels in the broth are cool enough to handle. Remove the mussels from the shells and add to the bowl. Add 12 of the shells to the seafood and discard the rest. Set aside 1/2 cup of the poaching liquid, discarding the rest.
  • Drain the seafood in a colander and put it all back into the bowl.
  • For the dressing, heat the olive oil in a medium (10-inch) saute pan over medium heat. Add the garlic, oregano, and red pepper flakes and cook for 1 minute. (Be careful: Overcooked garlic will be bitter.) Add the tomatoes and cook over medium heat for 2 more minutes. Add the reserved poaching liquid, the limoncello, lemon zest, lemon juice, 1 tablespoon salt, and 1 teaspoon pepper and cook for 1 more minute.
  • Pour the sauce over the seafood and toss gently. Add the fennel and parsley.
  • Cut a lemon in half lengthwise, cut it thinly crosswise, and add it to the salad. Toss gently to combine and cover with plastic wrap. Chill for at least 3 hours or overnight.
  • To serve, sprinkle with 2 teaspoons salt, 1 teaspoon pepper, and the juice of the remaining lemon. Taste for seasonings and serve cold or at room temperature.

A Taste of Italy: My Italian Seafood Salad Adventure

As a busy working mom, finding time to cook delicious and healthy meals can feel like a Herculean task. Weeknights are often a blur of school pick-ups, homework battles, and the never-ending cycle of laundry. However, I'm also passionate about enjoying good food, and I firmly believe that even a hectic life shouldn't mean sacrificing flavorful, nourishing meals. This is where my love for quick, yet impressive recipes comes in. And recently, I’ve become completely obsessed with my new go-to dish: Italian Seafood Salad.

This isn't your average seafood salad. This is a vibrant, zesty explosion of flavors that perfectly captures the essence of the Italian coastline. The tender shrimp, succulent scallops, and perfectly cooked calamari, all swimming in a fragrant lemon-garlic dressing, transport me straight to a sun-drenched Italian piazza. The salty kiss of the sea, complemented by the bright acidity of lemon and the subtle sweetness of tomatoes—it's a culinary masterpiece that takes far less time than one might think.

The beauty of this recipe lies in its simplicity. While the final dish is undeniably sophisticated, the process is surprisingly straightforward. It all starts with perfectly poaching the seafood. This gentle cooking method ensures that the seafood remains succulent and tender, never tough or rubbery. A simple broth of white wine, Old Bay seasoning, and salt infuses the seafood with a delicate, savory flavor that's simply irresistible. I love the anticipation of the simmering pot, the sweet aroma of the spices, and the comforting sound of the gently bubbling broth.

Once the seafood is cooked to perfection, the magic begins. The dressing is an alchemy of fresh ingredients – vibrant tomatoes, fragrant garlic, a hint of red pepper flakes for a subtle kick, and a generous splash of limoncello for a touch of unexpected sweetness. The bright zest of lemon and fresh parsley perfectly complement the rich seafood, creating a symphony of flavors that dance on the palate. It's in the small details – the delicate slicing of the fennel bulb, the careful removal of the seeds from the plum tomatoes, the precision of mincing the garlic – that this salad truly shines.

The best part is that this salad tastes even better the next day! The flavors meld and deepen as it chills, creating a complex, harmonious balance that is truly magical. I often make a double batch, enjoying the leftovers for lunch the following day, allowing the flavors to enhance. I find it so satisfying to have a healthy and delicious meal prepared in advance, saving precious time during the busy work week.

This Italian Seafood Salad isn't just a recipe; it's an experience. It's a taste of Italy on my kitchen table, a moment of calm amidst the chaos of daily life. It's a dish that nourishes my body and soul, reminding me to slow down, savor the moment, and appreciate the simple joys of good food and good company. It's a dish that I am thrilled to share with all of you, encouraging you to create your own culinary journey of flavor and freshness.

So, next time you're looking for a quick, delicious, and healthy meal that impresses, look no further than this Italian Seafood Salad. It's a recipe that has quickly become a staple in my kitchen, and I’m confident that it will become a favorite in yours as well.

The recipe is incredibly versatile. Feel free to experiment with different types of seafood – perhaps some mussels instead of calamari, or add some chunks of lobster if you’re feeling fancy. You could even adjust the dressing to your preference, adding more or less lemon, or experimenting with different herbs. The possibilities are truly endless.

But the most important ingredient, in my opinion, is time. Make this salad with love, giving yourself the space to enjoy the process of creating something beautiful. Take your time chopping the vegetables, savoring the aroma of the garlic and herbs, and carefully arranging the seafood. The act of cooking is as much about relaxation and mindfulness as it is about creating a delicious meal. And let me tell you, the satisfaction of preparing this dish, and then sharing it with your loved ones, is utterly priceless.
