Step-by-step

  • The previous day, combine the ingredients for the wet rub in a small mixing bowl. Stir with a spoon until well combined.
  • Pat the bird dry and carefully loosen the skin from the breast by delicately sliding your fingers under it from the neck end until you reach the end of the breasts. Be careful not to break the skin.
  • Rub half of the spice mixture between the flesh and skin.
  • Rub the other half all over the bird's skin, including breasts, thighs and wings.
  • Cover the turkey with plastic film and set it in the fridge to rest until the next day.
  • Preheat oven to 325F
  • Remove turkey from the fridge and place it on a rack in a roasting pan.
  • Stuff quartered apples as well as a few sprigs of fresh rosemary in the cavity.
  • Tie legs neatly together.
  • Add maple syrup, apple juice, star anise and cinnamon stick to the bottom of the pan.
  • Sprinkle bird generously with salt and pepper.
  • Tent loosely with foil and roast in a 325F oven for about 20 minutes per pound or until a thermometer inserted into the thickest part of thighs registers 180F
  • Remove the foil for the last hour of roasting.
  • When turkey is done, take it out of the oven, place tent back over the bird and let it rest for 20-30 minutes before carving.
  • Oh, and by all means, do not chuck those baked apples; eat them. They are absolutely spectacular!

My Thanksgiving Triumph: A Maple-Glazed Spicy Apple Turkey

Thanksgiving. The word itself conjures images of warmth, family, and, of course, the star of the show: the turkey. This year, I decided to break free from the usual roast and try something a little different – a Maple Glazed Spicy Apple Turkey. The idea initially felt a bit ambitious, even daunting. I'm not a culinary professional; I'm a working mom who just wants to create a memorable meal for my loved ones. But the thought of a juicy, flavorful turkey infused with warm spices and sweet maple glaze was too tempting to resist.

The recipe promised a unique twist on tradition, and I have to say, it delivered. The preparation was surprisingly straightforward, even with the slightly more complex spice rub. The hardest part was probably patiently waiting for the turkey to rest after roasting – a crucial step that ensures a tender and succulent result. The aroma that filled my kitchen during the cooking process was absolutely intoxicating – a symphony of sweet maple, spicy chai, and the earthy scent of rosemary and apples. It was enough to make anyone hungry, even before a single bite.

The day of the feast, I woke up with a mixture of excitement and nerves. Would it be dry? Would it be too spicy? Would my family love it as much as I hoped? All my anxieties evaporated the moment the turkey emerged from the oven, glistening with its beautiful maple glaze. The presentation alone was stunning – a perfectly roasted bird, fragrant and golden-brown. And the taste? Oh, the taste! The balance of sweet and spicy was divine, the apple adding a refreshing burst of tartness that cut through the richness of the maple and turkey. It was everything I hoped for and more. My family raved about it; there wasn't a single piece left over.

Beyond the delicious outcome, the journey of making this turkey was incredibly rewarding. It proved to me that even ambitious recipes are attainable with a little patience and attention to detail. I discovered a new level of confidence in the kitchen. More than just a delicious meal, this Thanksgiving turkey became a symbol of my culinary growth and a testament to the joy of creating something special for those I love. I've added this to my recipe rotation for future Thanksgivings – and maybe even for other special occasions! The combination of the maple syrup, the spicy rub and the apples is something truly extraordinary, something I encourage all home cooks to try.

Ingredients I used:

1-10 to 15 pound fresh turkey: The star of the show! Choose a turkey that’s large enough to feed everyone.

1/2 cup pure maple syrup: For that rich and sweet glaze.

2 whole star anise: Adding a subtle, licorice-like flavor to the roasting liquid.

2 tbsp pure maple syrup: In addition to the glaze, this adds to the base rub.

1 tsp Himalayan or unrefined sea salt: Use quality salt for the best flavor.

1 tsp freshly cracked black pepper: Freshly ground black pepper is always superior.

1/2 tsp chai spice: The secret ingredient for that wonderful spicy note. You can adjust this to taste.

1 tsp fresh rosemary finely chopped: Adds a lovely herbaceous aroma and flavor.

3-4 large red apples cut into quarters (I used Fuji): Providing a sweet-tart contrast inside the turkey.

2-3 sprigs fresh rosemary: More rosemary for the cavity.

2 cups all-natural unsweetened apple juice: Creates a flavorful base for the roasting liquid.

2 whole cinnamon stick: An essential part of that warming spice profile.

This is a recipe I highly recommend; it’s a delicious way to change up your usual Thanksgiving and impress your family. Even if you’re not a seasoned cook, don’t be afraid to try new things. The results will be well worth the effort.
