Step-by-step

  • Preheat oven to 160C.
  • Take a 20cm round cake tin, cut out a piece of baking paper the size of the bottom of the tin and press into the bottom.
  • Lightly grease the cake tin, including the baking paper.
  • Place the butter, sugar and vanilla in the bowl of a stand mixer (or use a hand held mixer) and beat until light and creamy - about 5 minutes.
  • Add the eggs 1 at a time and beat until well combined.

  • Once cooled completely cut the cake in half, spread the bottom half with the jam and cream and put the top back on.
  • To make the frosting: Put all ingredients into the bowl of a stand mixer and beat for 5 minutes until fluffy.
  • Ice the cake and decorate as desired...preferably with sprinkles and glitter!
