Forgotten Cookies

These little cookies – described by one friend as tasting like a cookie within a cookie – are really a mixture between a meringue and a cookie. Hence they've become known at home, where they're immensely popular, as Merookies, and are ideal with a cup of coffee after dinner. They are called "forgotten" as, just like the 'Forgotten Pudding' in Nigella Express, they are not baked, but put in a hot oven, which you immediately turn off, leaving the cookies to bake in the fading residual heat overnight. I find it all too easy actually to forget them, and always put a post-it sticker on the oven to remind me they're in there, so I don't burn them to a cinder by preheating the oven to cook something else in it the next day.

Forgotten Cookies: A Culinary Adventure in Residual Heat

As a busy professional woman, juggling a demanding career and a personal life often leaves me with limited time for elaborate cooking projects. I crave delicious treats, but the idea of spending hours in the kitchen is often a daunting prospect. That’s why I adore recipes that offer maximum flavour with minimal effort, and these Forgotten Cookies are a perfect example. They are a delightful discovery, a testament to the magic of residual heat and a surprisingly simple way to create something truly unique and memorable. The name itself is intriguing - "Forgotten Cookies" - hinting at a method as unconventional as the delightful result.

The first time I encountered this recipe, I was skeptical. Baking without actually baking? Leaving cookies in a turned-off oven overnight? It sounded almost too good to be true. However, curiosity and a lack of time led me to give it a try, and I'm so glad I did. The result was a delightful surprise – delicate, crisp cookies with a subtle sweetness that is perfect with an evening cup of tea or coffee. They are not your average cookie. They have a lightness and airiness thanks to the meringue-like base. The pistachios and chocolate add a lovely crunch and a touch of richness, creating a harmonious balance of textures and flavours. The "forgotten" method somehow creates a subtle caramelisation that adds depth to the overall flavour profile.

The beauty of these cookies lies not just in their delicious taste but also in their simplicity. The process is incredibly straightforward. Whisk, fold, drop, and forget! It’s the epitome of effortless baking. The most difficult part is remembering to take them out of the oven the next morning! I’ve learned to set reminders on my phone to avoid turning my oven into a crisp-making machine. I can easily prepare the batter in the evening, taking just minutes to whisk and fold the ingredients together. This allows me to enjoy a relaxing evening without the stress of a time-consuming baking project. The next morning, the kitchen fills with a delicate aroma, the delightful promise of the delicious treat that awaits. Once I've taken the cookies out, I carefully place them on a cooling rack to cool completely before indulging.

These cookies have become a regular feature in my kitchen, a quick and easy way to impress guests or simply enjoy a delightful treat at the end of a long day. They are versatile too; I’ve experimented with different nuts and chocolate, creating variations to suit my mood and the availability of ingredients. You can easily swap pistachios for almonds, pecans, or walnuts. Dark chocolate is my favourite, but milk chocolate or even white chocolate would work equally well. The possibilities are endless!
